08.09.13 by Jackie

Here's a refreshing, healthy treat for you to enjoy this summer. We made coconut peach popsicles using peaches from our garden and fresh coconuts. The popsicles are made out of a blend of puréed peaches, diced peaches, coconut milk, fresh coconut water, fresh shredded coconut, freshly squeezed lime juice, honey and vanilla beans.

You can't go wrong with these frozen treats. Plus, they're vegan! Depending on what fruit you have available, be creative and combine the fruits and spices you like.

Cardamom and Banana Muffins Recipe

Cardamom and Banana Muffins

08.02.13 by Jackie

There's a French idiom "après l'effort, le réconfort", which roughly translates to "after all that effort, sit back and relax". My husband's teenage sisters Lya and Mimi took this idiom to heart, culinarily-speaking, by baking mini-muffins after a hard three-hour workout. What can I say, they were hungry for sweets. The girls decided to flavor them with freshly crushed cardamom and ripe bananas and baked them in a mini muffin pan. The illusion of saving calories by eating multiple mini treats instead of one big one made them feel good.

I love cardamom. It’s a common flavor in Indian cuisine; in addition to its potency, it's very versatile. You can easily make a fragrant gravy or flavor your favorite dessert, all with the same ingredient. What’s not to love?

No Bake Blueberry Cheesecake Recipe (Egg Free Dessert) Recipe

This dessert might look complicated, but trust me, it took me all of 20 minutes tops to assemble it. It's an egg-free, no-bake blueberry cheesecake. I still had a couple of jars of Meyer lemon marmalade from last season and I julienned the lemon rind to flavor the cheesecake and decorate it as well. The citrus provides a great balance of flavor.

This sort of cheesecake only requires a handful of ingredients, which includes quality lady finger cookies, mascarpone cheese, heavy cream, powdered sugar, a hint of tangy crème fraîche, fresh blueberries, Meyer lemon marmalade (or whatever you have on hand) and a combination of lecithin, xanthan gum and a bit of oil. That's pretty much it.

Hawaiian Granola Bar Recipe Recipe

Hawaiian Granola Bar Recipe

08.21.12 by Jackie

Our friend Sarah from Nuts About Granola has launched her first-ever box-mixed granola, called Granola Basics. The concept is brilliant and a lot of fun. Start with Granola Basics, then add a sweetener such as honey, agave or maple syrup. Finish with a few tasty mix-ins such as nuts, dried fruit or chocolate and you’re done.

Of course, I wanted to test it out! In my opinion, nothing can go wrong when you mix exquisite ingredients such as Guittard chocolate, fresh coconut shavings, Hawaiian ginger syrup, candied ginger and macadamia nuts, so that’s exactly what I did. It’s not quite a trip to the Aloha State, but very satisfying nonetheless.

If you want to give this delicious one-of-kind product a try, you can participate in this week's giveaway for one box of Granola Basics. Can’t wait? Buy it online, or if you live in the Baltimore area, you can find it on Whole Foods Harbor East shelves.

Marshmallow Popcorn Treat Yogurt Parfait Recipe (+ Giveaway) Recipe

479° Popcorn is my favorite snack of the moment. The packaging is fun and creative and needless to say this gourmet organic popcorn is awesome. I could finish an entire bag on my own. 479° Popcorn is a San Francisco company that features a very interesting array of flavors such as Fleur de Sel Caramel, Alderwood Smoked Sea Salt, Black Truffle, Chipotle Caramel + Almonds, Ginger Sesame Caramel, Madras Curry Coconut + Cashews, Pimenton de la Vera and Vietnamese Cinnamon Sugar. The design is so original it makes the perfect holiday gift box. One of my husband's little sisters is obsessed with popcorn, and her birthday is coming up in a few weeks, so we're planning on buying her weight in 479° popcorn as a present. OK, that's a bit of an exaggeration!

I love experimenting with just about anything, so I created marshmallow treats with their Vietnamese Cinnamon Sugar-flavored popcorn. I made a yogurt parfait and incorporated the sweet treats as a substitute for granola. This recipe is flavored according to the season; I used mandarin wedges and orange and cranberry sauce. You could adapt it with what you like of course. You don't have to create these cups for breakfast or dessert (or whenever you eat parfaits); just savoring 479° Popcorn by itself is perfectly reasonable.

Make sure you're a fan of PhamFatale Facebook fan page and 479° Popcorn, or follow @Phamfatalecom and tweet about this giveaway. To make it easy, you can just copy and paste this tweet if you’d like: "Sweet Tooth Gift Pack #Giveaway from @Phamfatalecom and @479Popcorn: http://bit.ly/sp4V7y".
