Peanut Butter Chocolate Cookies Recipe

Peanut Butter Chocolate Cookies

12.13.13 by Jackie

The girls and I have been baking up a storm this holiday season. Here's the recipe for their favorite cookie from this week’s concoctions. We made them without flour, butter or white sugar. The only requirement is the use of a generous amount of peanut butter, brown sugar and a few Christmasy-colored chocolate chips. The result was super gooey, soft and pillowy cookies.

The girls suggested we bake as many varieties of cookies as possible until Christmas Day. I can already tell what my New Year’s resolution is going to be!

Pumpkin Marshmallow Butterscotch Oatmeal Bars Recipe

These sinfully scrumptious pumpkin marshmallow butterscotch oatmeal bars may be beautiful to look at and a bit messy to eat, but they were a huge hit at our house. First, I prepared a chewy oatmeal-brown sugar crust for both the base and the topping. For the filling, I selected Thanksgiving-related items such as pumpkin purée, oozy marshmallows, decadent butterscotch chips and chocolate chips.

This sweet treat is definitely going to be part of our Thanksgiving menu. When I asked for the family's feedback, all I heard was "more". You might also want to prepare a batch for the morning following Thanksgiving; these winning bars would be a perfect brunch contribution as well.

Apple Pear Cake Recipe

10.18.13 by Jackie

My husband Lulu's favorite uncle (it's safe to say this because Daddy only has one brother) generously gave us two large bags filled with apples and pears freshly picked from his garden. They were so sweet that we ate a lot of them straight away.

After having our fill, I prepared several cakes with the remaining fruit. The recipe is fairly basic: simple cake batter, flavored with both vanilla beans and vanilla extract, poured into a non-stick mold and topped with cubes of three apples and one enormous pear. Once the cake was hot and ready, I drizzled it with a little bit of Calvados (apple-flavored liqueur) for extra yumminess.

Chocolate and Orange Spritz Cookies Recipe

I love to bake cookies. And when I have free time, I usually make cookie dough to freeze so whenever we have surprise guests, I have warm cookies freshly baked out of the oven. Today, I prepared a small batch of spritz cookies, which I flavored with cocoa and orange to match the season. These "gâteaux" (cookies in French) were made with brown sugar, so once they're baked, the house is filled with the scent of delicious chocolate-y caramel.

As I've mentioned in the past, baby Aria's eating habits are very similar to my husband’s. She loves sweets. She finished almost half the batch this afternoon before the girls even got back home from school. Naughty girl!

Mango Cake Recipe Recipe

Mango Cake Recipe

10.04.13 by Jackie

This mango dessert is my way of raging against the dying of the (sun)light. Fall is here, but at least it can be summer on our dessert plates!

While I was in Paris, I had quite a few delicious clafoutis. This dessert is inspired by those treats. I caramelized a ripe mango, diced it and covered it with a clafoutis-like batter. A short time in the oven, et voilà! The spongy, sweet dessert was a fabulous feast. It's best eaten warm with a hot cup of tea. It’s also a great alternative to French toast for a lovely Sunday brunch.
