Vietnamese Green Mango Salad Recipe: Goi Xoai Recipe

Vietnamese salads are usually made with the same dressing. A blend of lime juice, garlic, sugar, red Thai chiles and fresh mint leaves bind raw vegetables into a flavorful and healthy salad course. Today, I made green mango salad, called gơi xoài xanh. I create long, thin strips of mango that I mixed with similarly sliced carrots. It makes a very tasty salad thanks to the tangy, sour and sweet flavors.

I made it vegetarian, but you could pair the raw vegetable salad with boiled, shredded chicken (gơi gà), boiled shrimp, dried shrimp (tôm khô) or fire-roasted shredded dried squid (khô mực), which is my favorite.

Red Cabbage and Bean Sprout Salad Recipe Recipe

I had leftover bean sprouts from a large pot of phở over the weekend, and I decided to make a salad with it. The color of the bean sprouts needed a little oomph, so I added shredded red cabbage. In addition to the red cabbage, I also used diced Fuji apples.

Given the Asian flair of the salad, I made a peanut, lime and condensed milk vinaigrette. This is a very quick and easy first course, which gave me some time to work on a delicious dessert to satisfy my husband's sweet tooth for Valentine’s Day.

Grapefruit Salad (Pomelo Salad)

It's been raining so much this season in the Bay Area (California) that our garden has produced a lot of citrus. Our pomelo tree has been particularly prolific. I've been pleasantly surprised by their sweetness, and I knew I was on to something delicious.

Pomelos have a subtle sweetness that is greatly enhanced by the addition of certain spices. To make this salad, I gathered the pomelo segments in a large bowl and covered them with ginger, coriander, agave nectar, sesame oil and red Thai bird chiles. It's a refreshing way to begin or end a meal.

Asian Style Warm Potato Salad

This potato salad is made with a medley of Japanese white sweet potatoes, yams, Yukons and Peruvian purples. The different varieties provide a contrast of both flavor and color. To give the salad an Asian flair, I also added bok choy and several types of mushrooms. The dressing, made of honey, rice vinegar, soy sauce and ginger paste, helps tie the flavors of the vegetables together.

Vietnamese Chicken Salad (Goi Ga) Recipe

The key to great, flavorful gơi bắp cải (chicken and cabbage salad in Vietnamese) is to boil the chicken properly. Flavoring the broth prior to boiling the chicken is essential. This is the one chance you have to infuse additional flavor in the meat. As Tatie Danielle (aunt) says, "everyone knows how to make the sauce, not everyone knows how to cook the meat properly." She used to run a restaurant in the early '90s and is the best Vietnamese chef I know.

Even though this is referred to as a salad, it is typically eaten as a main course. Not only is it a great, filling meal, but nothing goes to waste. With the leftover broth, you can make súp bún măng gà, literally bamboo and chicken rice noodle soup, or a rice congee (cháo gà in Vietnamese), which is a type of chicken and rice porridge. The porridge in particular is great in the winter. I'll post the recipe when it starts getting really cold.  For now, enjoy some Vietnamese Chicken Salad!
