Beef Stew Appetizers Recipe

Beef Stew Appetizers

02.06.14 by Jackie

Baby Aria is a toddler now and even though I tend to feed her soft food, I still want her to experience the different textures and flavors each meal can bring. I prepared a beef stew, which she adored, but I still had a little meat left. So I shredded it with a fork, formed little mounds and used them for appetizers.

I always have extra dough stored in my freezer (I used the same dough for my roasted butternut squash galette earlier this week). I formed little pockets by cutting rectangles of dough and pinching the edges with the back of fork. These little appetizers were so addictive that they were all gone in a jiffy.

Perfect Filet Mignon Steak Recipe Recipe

This type of preparation is my favorite way to go when I buy an amazing quality cut of beef, such as filet mignon. I simply seasoned both sides of the filet mignon with salt and pepper, pan-seared until a crust formed and completed the roasting in the oven.

The key to perfection was to let the meat rest for a few minutes before slicing. The last step was making a sauce au poivre (whole peppercorn sauce) and placing the slices of beef on top like a fan. This was heavenly scrumptious. You can pair the meat with your favorite potato side dish, which can be found in my first cookbook, Haute Potato available from Amazon and Barnes and Noble.

Stuffed Veal Escalope Recipe Recipe

Stuffed Veal Escalope Recipe

12.18.13 by Jackie

This is a meal that would fit perfectly at your Christmas Eve dinner table. What I love most besides the incredible flavors is the beautiful presentation of the food. Plating plays a big part in the aesthetics of a dish, so don’t forget that aspect as you plan your holiday feast.

I prepared veal escalopes stuffed with lemon, pine nuts, golden raisins, garlic and fresh tarragon. Once the escalopes were cooked, I completed the dish with a flavorful sauce made from the pan drippings.

By the way, there is still time to order both of my cookbooks, Haute Potato and Banh Mi, as gifts to your loved ones for Christmas . 2013 was a great year for me professionally, and 2014 seems to be starting with a bang. I;m doing a Golden Globes Luxury Gifting Suite at the beginning of the year and copies of Banh Mi will be included in the celebrity "swag bags."  Celebrities will be photographed on the red carpet at the suite with the Banh Mi book and I will be serving a few dishes from my cookbook. I'm so excited!

Ghost Halloween Lemongrass and Ginger Beef Noodles Recipe

Boo! I have to admit I'm a little ashamed of today's Halloween-inspired meal. I prepared Vietnamese beef noodles (bún thịt bò xào xả gừng in Vietnamese) today and I had in mind that I'd be able to have fun with the rice noodles and create scary mummies. In the end, it looked neither like a mummy nor a ghost. As we were eating dinner, little Lala asked for 2 whole black peppercorns and found a solution to our mummy situation. Et voila! What do you think?

Cold beef noodle salads are very common in Vietnam and they are definitely a staple in my home. Sauteed beef in lemongrass is served with thick rice noodles and an abundance of Vietnamese greens. It might not be the creepiest meal for the Halloween season, but it sure is delicious.

French Soupe au Pistou Recipe (Minestrone Soup with Pasta) Recipe

Soupe au pistou is the equivalent of minestrone soup mixed with a bit of thick, Provençal-style sauce. First, I prepared beef stock (you could also use vegetable stock for a vegetarian version), then added white beans, zucchini, carrot, peas, corn, fresh tomatoes and boiled pasta and finished the soup with a few spoonfuls of a chimichurri-like sauce made of garlic, basil, olive oil and flavorful cheeses.

Aria is old enough to eat on her own with her special baby spoon now and she loved the soupe au pistou! I used regular macaroni pasta but you could use thin pasta or cut-up spaghetti instead. I also incorporated two types of cheeses -- Gruyère and Mimolette -- for flavor. If the stock is prepared in advance, this meal shouldn't take too long to assemble.
