Spicy Stir Fried Beef and Green Beans Recipe

Stir-fried green beans and beef make a delicious dish. First, green beans are deep fried until the outer skin becomes slightly wilted. Once all the beans are fried, they're stir-fried in garlic, chili garlic sauce, black bean sauce and soy sauce with beef. I also thicken the dish with a bit of cornstarch and add chiles for extra flavor. But the key ingredient is cashew nuts, which provide incredible texture and nutritional value with folic acid.

This may not be the healthiest way to prepare a stir fry, but I can’t get enough of it. The natural sweetness of the green beans balances perfectly with the tenderness of the beef. For a healthier alternative, you could substitute tofu for the meat and omit the sesame oil and sesame seeds.

Meatball Appetizers with Sweet Potatoes Recipe

Since my husband Lulu was out of town last weekend, I had a few girlfriends over to celebrate the Lunar New Year (a week late!). Next week, we're all going to a Vietnamese charity concert and everyone was talking about how they'd fit into their áo dài, the traditional Vietnamese outfit. I've been back to the gym regularly to do squats and get a solid workout and I just made sure the food would please my weight-conscious crowd.

The menu I served wasn't fussy at all and I tried to satisfy everyone's diet: we started with easy, delicious, look-and-feel-your-best meatballs. I also made cháo đồ biển (seafood rice soup with seabass, shrimp, squid and scallops), along with a kale salad. 

What was in the meatballs, you ask? I created a ground mixture of veal, turkey, flax seeds and quinoa and served with spicy sweet potatoes.

Beef Prime Brisket Recipe

My daughter Aria and I are huge fans of fork-tender beef brisket. My secret tenderizer is a combination of baking powder, dried spices and coarsely-ground black pepper for the dry rub. I kept the flavorings pretty simple, using garlic, onion, sugar, dry mustard, dried oregano and bay leaf.

For a nice contrast of texture, I served the slices of brisket on a bed of red cabbage slaw.

Wine-Braised Chuck Roast with Pasta Recipe

Baby Aria's choice of meat, by far, is beef. And the more tender it is, the more she likes it. I really enjoy making one-dish meals for her. Today, I seared boneless beef chuck steaks, then braised them in wine (the alcohol cooks off during the braising process). Once tender, I boiled campanelle pasta and transferred it to the beef pot. The flavorful gravy sneaked into the cavities of the odd-shaped trumpet-like pasta, which made it more fun for Aria to eat.

I flavored the dish wth fresh thyme, clove, parsley, tomato paste. bay leaf, turnips, onions and garlic. The key ingredient, though, is drinking-quality red wine. C'est tout ("that's it!")!

Beef Stew with Pan-Fried Polenta Recipe

After preparing beef bourgouignon a few weeks ago for baby Aria, I wanted to prepare another beef stew that is nutritious with a velvety consistency. I used pearl barley for the sauce and served crispy pan-fried polenta rounds for a nice contrast of texture.

I try to balance her meals and not serve her too many dishes made with white flour, so barley and polenta are a great alternative. My mother-in-law has just been diagnosed with celiac disease and has been asking me about gluten alternatives that would help her not miss gluten and would satisfy her appetite as much as regular bread or pasta. There are so many other options; you just have to think outside the box.
