Meat and Potato Napoleon Recipe

Here's a new take on a meat and potato dish. I pan-fried patties and potato slices, then stacked them into a charming presentation to create a napoléon. I flavored the savory napoléons with goat cheese pesto and placed them on a bed of garlic and basil tomato sauce. I think the tomato sauce helps cut the heaviness of the dish.

Pho Bo Recipe (Vietnamese Beef Noodle Soup) Recipe

This weekend, we had a quiet dinner with only my family and I decided to make my dad the Vietnamese dish I think I make the best. There are several variations of Vietnamese beef noodle soup; I wanted to make Papa’s favorite, which is the one with beef tendon, called phở bò tái gân.

We watched la Météo (weather forecast) yesterday on TV and it seems it's going to be raining all week!.The clear broth is absolutely delicious and it's perfect if you feel under the weather, which seems be happening to us given the rain!

Butternut Squash Pocket Sandwich Recipe Recipe

My husband's youngest sister, who just started third grade, recently told me she didn't like "Wednesday Pizza" at school and asked me to give her a boxed lunch instead. I had leftover roasted butternut squash, so in the morning, I quickly improvised a flavorful hot pocket sandwich with 2 of my little munchkin's other favorite ingredients: salami and brie cheese. 

I assembled the pocket in a sandwich grill we have. I love this sandwich maker because it browns the bread and seals the sandwich perfectly. After they were done cooking, I wrapped the sandwiches in wax paper and packed them in her Disney Princess school lunch bag. The sandwiches cooled down to room temperature by lunch time, but they were still crunchy and delicious. If you were to make these as a box lunch for work, you could put them in the toaster to re-heat before eating. No microwave though!

Vietnamese Beef and Broccoli Recipe (Thit Bo Xao) Recipe

This is a quick beef stir fry recipe accompanied with broccoli florets and carrots. The sauce consists of sherry wine vinegar, palm sugar, soy sauce, oyster sauce and a bit of corn starch as the thickening agent.

I served the beef dish with steamed jasmine rice. It's that simple. Why order out?

Beef Stir fry with Bamboo Shoots (Bo Xao Mang Recipe) Recipe

I bought three large bags of fresh bamboo shoots this weekend, which I used to prepare an enormous pot of bún măng gà (bamboo chicken noodle soup).

Today I took the leftover bamboo we hadn't cooked, but instead of chicken, I paired the bamboo shoots with tender beef steak (bò xào măng). I stir-fried the two with oyster sauce and fresh ginger. To add a little color to the dark dish, I mixed in a few vegetables such as asparagus spears, carrots and Portobello mushrooms. You could make the exact same dish with tofu and vegetarian stir fry sauce if you need to feed a vegetarian crowd, (which is always my case!).
