Onion Masala Manicotti Pasta Recipe (+Giveaway) Recipe

I came up with this new dish after I received masala marinara pasta sauce from our friend Dave of DavesGourmet.com. This special sauce was the winner of the Sofi Award for outstanding pasta sauce in 2010. The sauce is very creative and definitely has a South Asian flair with hints of ginger, coconut and kaffir lime leaves. It's a must try.

Since the sauce itself is a fusion of cultures, I thought it would be fun to continue the theme and make an Italian pasta dish with Indian flavors. I made Indian-style pearl onions cooked in onion masala sauce, called dopiaza. I used that mixture to flavor manicotti stuffed with ricotta cheese and a generous helping of French triple cream cheese. If that sounds a bit decadent to you, well, it is!

Prime Rib Roast Recipe

It’s December! Hard to believe there's only one month left in 2011, huh? If you're planning on hosting a holiday dinner, a flavorful prime rib roast might be the centerpiece you’re looking for at your holiday feast. The preparation of the meat is relatively simple and requires no marinating time. The key to success is to measure the internal temperature (135-140 degrees F) to guarantee proper doneness. The cooking time varies and isn't necessarily an indicator of a perfectly cooked prime rib. 



I wanted to give my prime roast rib an Asian flair, so I seasoned it with kaffir lime leaves, miso paste, red chili powder and fresh ginger. I rubbed the meat with the mixture and roasted it until the thermometer indicated the right internal temperature. You could of course add your favorite flavors here, but I think because of the high quality of this cut of meat, you should stick to the old adage that less is more. It's a simple, yet very tasty recipe that ensures a succulent and extremely tender prime rib. I finished the dish by broiling the crust for added crispy, intense flavor. It's hard to mess this one up!

Warm Vegetable Salad Recipe

I'm still on the quest to follow Joy Bauer's 90 |10 food philosophy. By that, she means eating healthy foods 90% of the time and splurge on treats the remaining 10% of the time. Today I paired a very healthy portion of seasonal vegetable salad with a much more reasonable serving of succulent roasted a leg of lamb, which I admit is probably not the healthiest dish (look out for that recipe soon - probably when I feel less guilty!). The salad consists of zucchini, white asparagus and carrots cut into long, thin linguine shape strips. The trio is quickly sautéed with coriander and ginger and finished with lemon juice. The result is a crunchy, naturally sweet, warm salad with a little fresh zing from the lemon.

What I like most about this dish is how vibrant the colors are. Over-cooking veggies depletes their nutrients and can result in less attractive hues, so make sure you give the veggies just enough time to soften and you'll have a beautiful dish.

Breaded Tofu: Tofu Parmesan Recipe Recipe

Tofu parmigiana is one of the many variations on meat dishes I make, so I'm able to share a similar meal with my husband Lulu, who is a vegetarian. The last time I prepared this dish was to celebrate our wedding anniversary with a romantic dinner. It was a perfect date-night menu: I had chicken and he had tofu.

For this version, I breaded firm tofu with Japanese bread crumbs (panko). First, I flavored the panko with dried oregano and garlic powder. Then, I pan-fried the panko-dredged tofu, layered it with a creamy tomato sauce and a few slices of fresh mozzarella cheese and topped it all with Parmesan cheese. The cheese finished melting in the oven, and with a garnish of sweet basil the dish was complete. I served it with a side of linguine pasta. I guarantee you this dish is as delicious as the meat version!

Shirataki Yam Noodles: Noodle Salad Recipe (+ Giveaway) Recipe

Similar to tofu, shirataki noodles can look and taste pretty bland on their own. When I received the package from AsianFoodGrocer.com, I knew I had to enhance the flavor with a sauce. I made a peanut salad dressing that I've used often to flavor tofu, but this time I made it with oyster sauce, miso paste and hot sauce. I added colors to the noodle salad with red bell pepper, pickled garlic, cilantro and green onions. I topped the salad with crushed nori, for a briny flavor and  also sesame seeds and crushed peanuts for texture. We eat with our eyes first, and I think the dark color of the bowl serves as a very attractive contrast to the noodles.

The noodles themselves are very healthy (almost no calories, gluten and cholesterol free). So if you're looking for a light meal, this recipe might be it!
