Miso Marinated Sea Bass Recipe

We hosted a 5-course formal dinner last night, and for the main entree, I served a duo of filet mignon and pan-seared seabass. I previously marinated the sea bass in a combination of miso paste, lime juice, cumin, cayenne pepper and turmeric.

Seabass is such a delicate and exquisite fish that you don't need to do anything extra. Just make sure to form an outer crust while pan-searing the fish and complete the cooking in the oven. It's as simple as that!

Valentine's Day is coming up this week. I'm still not sure if my husband Lulu will be home on time (he's scheduled business travels this week) but we know for sure we'll have a lovely belated celebration together eventually. One of Lulu's favorite dishes these days is anything spicy, especially this to-die-for vegetarian Indian Chinese Manchurian dish that I prepare for him with deep fried tofu

I used freshly-made extra-firm tofu that I cut into large chunks and deep-fried. The rest was ultra easy; I tossed in a few seasonal veggies and coated everything in a combination of hoisin sauce, soy sauce, chili garlic sauce and fresh red chiles. Isn't it a great way to start spicing things up?

Roasted Lamb Banh Mi Recipe

We recently had roasted lamb flavored with pomegranate. As usual, I used the leftover meat the following day and prepared my favorite sandwich, a bánh mì  of course! You can find the recipe for the baguette, lime mayonnaise and Vietnamese pickles in my second cookbook, aptly entitled Banh Mi.

I have to admit a lamb bánh mì  is not “authentic”. Having said that, bánh mì is an adaptation of the French baguette sandwich. When the French left Vietnam, some of the ingredients such as the cornichons (French small gherkins) became so costly, they were substituted with local food items (pickled carrots and daikon with cilantro and sliced green chiles). The fillings can be tailored to suit your favorite flavorings. Adaptation and experimentation are why we have the foods we have today, so get in the kitchen and have some fun!

Passion Fruit Parfait Recipe

After my cousin Tri, whose wonderful neighbor owns several passion fruit trees, gathered a large basket of the fruit, I couldn't help but imagine the most delicious, exotic and romantic dessert. I figured chocolate was the perfect flavor pairing for this dessert cup, so I created chocolate and passion fruit parfait. Not only is the dessert decadent and delicious, nothing has to go to waste. I used the egg whites that weren't used in the custard and made tuile cookies.

I prepared these fancy desserts for a dinner social we're hosting this week, but I think they would be the perfect way to end a romantic meal. Remember, Valentine's Day isn't very far away!

Asian-inspired Mushroom Tart Recipe Recipe

Being born and raised in France with Vietnamese origins, this mushroom tart perfectly represents my two cultures. And with my husband Lulu being a vegetarian, I wanted to prepare a savory tart that fit his diet.

I prepared a regular butter crust, but I flavored it with green onions and Thai basil. I made the filling with both shiitake and king mushrooms, which have a meaty texture (especially good for vegetarian cooking). I balanced the flavors with five spice powder, sweetened condensed milk as a binder for the filling, garlic, hoisin sauce and rice vinegar. As a reminder of the flavor of the tart, once it was baked I covered it with more sliced mushrooms and added a drizzling of sesame oil for a Vietnamese twist. You could pair it with an Asian peanut red cabbage slaw to complete the meal.
