Halwa Dessert Empanada Recipe (International Desserts) Recipe

My father-in-law loves Indian sweets, so we make gajar halwa (carrot Indian sweets) very often at home. There was still leftover by the end of the day, and you know my motto: "waste not, want not!". I've made a carrot cheesecake recently using halwa. This time, I was inspired by the pistachio galettes des Rois I made earlier this year. I addded ground pistachios and kewra to keep the Indian-themed ingredients and folded the halwa mixture as if I was making a tarte amandine, using a different type of nut cream. I finally wrapped the carrot cream in puff pastry, empanada-style and  can be served with powdered sugar or drizzled with kewra syrup.

These little puff pastries pair perfectly with hot mint tea. Next time you have friends over for tea, this is the perfect treats that are both so unique and reminiscent of oriental sweets. Enjoy!

If you're planning on having a romantic meal on Valentine's Day, check out these adorable heart-shaped puff pastry appetizers. They're called palmiers. I've made a different version before with a traditional basil pesto, but today I decided to make them with sun-dried tomato pesto. Not only does it taste great, but the red color makes these little treats perfect for Valentine's Day.

Even though palmiers look really fancy, they are ultra simple to make. If you're in a real hurry, you can even use store-bought pesto. Don't worry, I won't tell.

Galette Des Rois a la Pistache (Pistachio Kings Cake) Recipe

This Galette des Rois (Kings' cake) is filled with a sweet pistachio mixture. The traditional Epiphany dessert is made with almond cream, called frangipane, so this was an obvious substitution. The green pistachios give the treats a nice color contrast, and work well with the flaky crust.

I got some Harry Potter fèves last time I went to Paris, which you can see in these pictures. The girls are obsessed with the series, so when I brought them out for the photos they went nuts. If you were to serve individual sized galettes, as I have done here, you should hide a fève in one of the dishes and let each person choose a plate at random. Just make sure to hide the fève well so that the naughty ones who peek can't figure out where you hid it. Whoever finds the fève is Queen or King for the day!

Pesto Palmiers (Basil Pesto Elephant Ears) Recipe

Pesto palmiers are quick and easy appetizers for an elegant party. I made these pesto palmiers bite-sized so that they would work well at a dinner party we're hosting tonight. I have to thank Rianne from Art of Dessert for her post that reminded me of how to make them. As she said, palmiers look incredibly fancy, but in reality are quite easy to make. On top of that, the puff pastry "logs" of palmiers can be frozen for later use. If you're storing frozen pesto cubes as I've suggested in the past, this is a recipe that you can whip up whenever you're in a pinch, and no one will be the wiser!

Poached Figs in Puff Pastry

Our garden is very abundant with figs this season. I gathered a full basket of large brown Turkey figs; they're re fairly wide and about 3 inches long. I love their flavor; they have a copper-colored skin, pinkish pulp and very few seeds. They are simply delicious and perfect for baking.

I poached them first in heavy syrup and wrapped them in puff pastry. It's a pretty easy dessert to make but sure to wow your guests.
