Peach and Spinach Summer Salad Wrap Recipe Recipe

Temperatures are set to hit high numbers these days so to keep the house cool I've tried not to spend too much time behind the stove or use the oven too much. My go-to meal in this situation is fast, casual eating that requires minimal preparation and almost no cooking. My solution this weekend is to make summer salad wraps

I used ripe peaches, baby spinach, goat cheese, cranberries and balsamic vinegar. The wraps are tied together with lavash flatbread. The contrast of colors is strikingly beautiful. And can you guess when this healthy and tasty recipe was born? Last year, while working with the creative California Lavash team. You can find this exact same photo on one of their new, colorful packages.

Shrimp Stuffed Dumpling Recipe Recipe

Shrimp Stuffed Dumpling Recipe

07.08.14 by Jackie

Ever since we were in Paris, baby Aria is finally enjoying the taste of meat and seafood. The idea of being able to feed her a wider variety of meals thrills me. During our stay, Maman served a lot of shrimp dishes. Yesterday, Aria requested dumplings. So I prepared and filled them according to my mom's recipe for the filling. Maman’s trick to give the shrimp a better consistency is to blend in a few baby squid with the shrimp. If that scares you, you can omit them; the dumplings will still be just as yummy.

Shaping dumplings can be a little tricky, and I think it's the biggest challenge the first time you try. So I simply shaped the dumplings and sealed the bottom with fresh, round pot sticker wraps. I also used unconventional flavors for the filling with fennel, carrots and green peas to please Aria's tastebuds.

Stuffed Dates with Duck Prosciutto Recipe

Mascarpone stuffed dates couldn't be a simpler appetizer to assemble. I used Deglet Noor dates, which are firm and not overly-sweet. FIrst, I pitted them and stuffed them with a coffee and rosemary-flavored mascarpone cream. This could surprise, but coffee pairs incredibly well with meat and with the addition of earthy rosemary, the duck prosciutto didn't feel lonely. These appetizers made a great snack; baby Aria and I enjoyed them a lot!

Please save the date for my upcoming book signing appearances. The next ones are taking place at Barnes and Noble. If you're in the Bay Area, be sure to stop by Barnes and Noble Blossom Hill, 5353 Almaden Expressway, Building B in San Jose, California. I'll be doing a cooking demo, followed by a book signing, on July 5th at noon.

Italian Tomato Bruschetta Recipe Recipe

During our trip to Florence, we were able to cook a few meals at home, sampling local ingredients. We lived right in the heart of Firenze and while preparing dinner, I sent my husband Lulu out to find a rustic bread. He ended up in a "panificio" (bread bakery) and asked the baker for his most popular bread. Lulu came home with a giant loaf of Tuscan-style bread, which I sliced into thick, crusty pieces and prepared bruschetta.

Bruschetta basically consists of grilled bread rubbed with fresh garlic and topped with tomatoes, olive oil, salt and pepper. I upped the flavors with roasted garlic and loads of fresh basil.

Turkey Meatball Appetizer Recipe Recipe

My childhood friend Alexia and her husband Olivier are visiting this week. I've been cooking with whatever is available in our vegetable garden. Olivier harvested lots of ripe radishes and we gathered the "fanes de radish" (the leaves) and made an almond pesto.

I served turkey meatball appetizers sandwiched between the pesto (that acted like a glue) and slices of radish. I garnished the appetizers with sliced almonds as a reminder of the flavor of the pesto.

My French guests are loving California cuisine!
