Com Ga Hai Nam (Hainanese Chicken Rice) Recipe

Whenever I have chicken broth leftover from making bún măng gà, literally "bamboo and chicken rice noodle soup", I make chicken rice with it. The dish is called cơm gà Hải Nam; the yellow hue comes from the aromatic chicken broth (in place of water) made from Vietnamese chicken. What is a Vietnamese chicken, you ask? In Vietnam, the gà đi bộ chicken are considered "free-range"; the chickens are "trained" to run and as a result the meat has a totally different texture from the chicken found in American grocery stores. If you want to make a very authentic broth, the choice of chicken is crucial. You can find it at Asian markets; ask for a gà đi bộ, literally a walking chicken.

Traditionally, cơm gà Hải Nam is served with pieces of the boiled gà đi bộ chicken and rau thơm, which translates to fragrant herbs. The herb mixture is usually composed of rau răm (Vietnamese coriander), Vietnamese mint, Thai Basil, ngò (cilantro) and thinly sliced cabbage. Of course, the dish is seasoned with nước mắm (Vietnamese fish sauce), fresh red Thai chiles, pickled shallots and thinly shredded fresh ginger. The overall dish is light and absolutely delicious!

Korean Tofu Soup with Rice Cakes Recipe

Rice cakes are made from glutinous rice flour. We buy them at the Korean market. They're a great alternative to bánh phở or ordinary noodles. What I love most about this product is  that they're made with no additives or preservatives. They're a favorite at our house. The texture is very nice, and works well in a simple, clear vegetable broth. If you're looking for a healthy meal, this is not your average diet cabbage soup.

Persian Basmati Rice with Raisins and Saffron Recipe

Recently we went to the home of  family friends for dinner. They made us an absolutely amazing home cooked Persian meal.  If I had known about all the incredible dishes that I was going to get to sample, I would have brought my camera to post them here!

One dish in particular that really stood out was the rice. Every culture that eats rice has its own particular method and manner of preparation. In our home, we make both sticky Asian jasmine rice and Indian basmati rice to satisfy the different palates.

What's different about this Persian rice recipe is that it's not just a neutral medium for delivering the flavors of a main course. It is prepared in such a way that it is delicious on its own. Cooked basmati rice forms the base, but to this are added saffron, fried onions, butter, and flavored raisins. The final product is ethereal, yet rich.

I've had it at restaurants many times, but never with the care and quality that was put into this preparation. as if that weren't enough, we also had another Persian rice recipe made with dill, but that's another post...

Wild Rice and Orzo Salad with Maple Vinaigrette Recipe

This dish is really three recipes in one. I combined my wild rice, kidney bean salad and orzo pasta salad recipes together to make a light and healthy meal. The maple vinaigrette helps tie everything together.

I usually make orzo pasta salad for parties and picnics, but we've been having a heat wave here and we all felt like eating something cool. The addition of kidney beans for protein and wild rice for fiber makes the dish more of a complete meal. If you have some leftover roast chicken, you can dice or shred it and add it to the salad as well.

Southern Black Eyed Peas and Rice Recipe

Rice and beans, in one form or another, are the staple nourishment of much of the world's population. We often eat Indian daal (lentils) and rice, which serves the same purpose of providing protein to the diet of the many vegetarians in our home. I'm always looking to add  some variety to my family's diet, and I discovered a new dish on a recent trip to New Orléans.

At least it was new to me. Black-eyed peas and rice is a very common dish in the American South. Prior to trying this dish, my only experience with black-eyed peas was in the Vietnamese dessert called chè đậu trắng. My husband likes black-eyed peas very much, so I made it for him using the same method for making Indian biryani, but with Southern ingredients.
