Gluten Free Cheesecake Parfait Recipe Recipe

It's National Cheesecake Day this weekend and, though I’ve made many cheesecakes in the past, my goal was to put a new twist on the special dessert. Since we were invited to our friend Carol's home (she’s gluten intolerant), I decided to make my cheesecake gluten-free.

I made the mousse egg-free and flavored it with both raspberries and strawberries. For a contrast in texture, I added a layer of crunchy, diced yellow nectarines. And to make it look more fun, I topped the dessert cups with pistachio-flavored whipped cream and crushed pistachios. I don’t think anyone missed the crust. For those who could eat gluten, I slipped a ladyfinger cookie into the verrine. How amazing does that sound?

Strawberry and Blueberry Fruit Salad Recipe (Coupe Fraises Myrtilles) Recipe

Berries are in season and we bought delicious flavorful blueberries and strawberries from Rogue Valley Farmers' Market in Ashland, Oregon. I was amazed to discover all the locally grown produce there.

Here's an easy and simple fruit salad I made for a picnic we had in Lithia Park that I wanted to share with you. I took the blueberries and strawberries from the market and served them along with brownies and chantilly (whipped cream). It was a real success, as there were only empty bowls to bring home.

Strawberries with Balsamic Syrup Recipe Recipe

At first, it might sound unusual to pair balsamic vinegar with fruit, but you'll be pleasantly surprised when it's reduced and sweetened with a little sugar. The intense, complex flavor really enhances the fruit. I made a sweet balsamic syrup and drizzled it over fresh strawberries that I had previously mixed with pure balsamic vinegar.

It's a great dessert to serve on hot days and as a bonus, it's healthy! Of course, the sweet balsamic reduction could be used on different sweets such as, frozen yogurt, ice cream or any fruit tart. When other varieties of fruit are in season, such as peaches, try grilling them and then adding the balsamic syrup. They're delicious!

Strawberry Banana Smoothie Recipe Recipe

A strawberry banana smoothie is perfect when you need breakfast on the go. I whip up the drink with frozen strawberries and a banana whenever Lulu is running late. Strawberries aren't quite in season yet, so frozen is your best bet. When you can get them fresh, this drink is even more delicious.

Besides being a vegetarian, Lulu is also lactose-intolerant, so it's a challenge to make him calcium-rich food. I used almond milk and yogurt to deliver calcium without adding too much lactose. I also added a scoop of whey protein to fortify the drink with a little protein. I placed the smoothie in a cup that I sealed with a lid and added a straw.

Lulu left for work with a strawberry banana smoothie in his hand and a kiss on his cheek. I think that's a pretty good way to start the day!

Strawberry Muffins

Marbled Muffins made with homemade strawberry jelly are our family favorite. The muffin batter is  mildly sweet with a touch of acidity from the strawberry jelly. I used strawberry extract and lemon zest in the batter and repeated both flavors in the jelly.

The muffins have a subtle elegance that makes a perfect treat for tea parties or for children's birthdays or play dates. I've made them for both, and they're always a hit. The design is my own attempt at modern art; I put a dollop of the jelly on top of the batter and then use a toothpick to draw in random designs. It's not Jackson Pollock, but hey, I'm sure it tastes better than his paintings!
