I mentioned recently that my husband Lulu surprised me with a celebratory trip to the Napa Valley. We felt it was well deserved after completing the manuscript of my first cookbook (available for pre-order). We stayed at the Vintage Inn. We've been there  before and we've never been disappointed. The hotel is located in the heart of Yountville, within 3 blocks of what seems like the highest concentration of Michelin Star Restaurants in the world. The service was exquisite as usual with complimentary champagne breakfast buffet daily and a lovely afternoon tea service to boot. It's by far the best hotel breakfast I've ever had, ranging from petite pastries, freshly-made omelets, goat cheese walnut puffs and chocolate tartlets. What truly caught my attention was the delicious almond tart with seasonal fruit. I couldn't resist making the same dessert today to remind us of our trip, and as a huge thank you to Lulu for such a fabulous, memorable vacation. Of course, the restaurants were out of this world and the scenery was beautiful; but the highlight of the trip was relaxing with my husband and baby at this lovely hotel. If you visit Yountville, without a doubt, stay at the Vintage Inn!

The tart is made with a dense, almond filling and a large quantity of fresh cherries and blueberries. I made the crust with powdered sugar, toasted rice flour and regular all-purpose flour. The result is a wonderful fruit tart oozing with sweet fruits and a crunchy crust.

Che Thai Recipe

Che Thai is a Vietnamese interpretation of a Thai dessert. It's made of a combination of coconut milk, half and half and pandan flavorings. This makes the base of the dessert, the rest is up to you. I usually add whatever I have available; it can be fresh jackfruit, longans, lychees, pomegranate seeds or agar agar jelly.

I have a funny anecdote about this dessert. When I first introduced it to my husband's family, everyone was very pleased and surprised by how refreshing it tasted, especially Lulu's uncle, Ibbu Mamu. It was a really hot summer day and I can still picture him, eating cup after cup of che Thai. At some point, he asked for the recipe. "Jackie, I love this dessert, it's so light and refreshing". After I listed off the ingredients though, he kind of freaked out, seeing as he had just polished off two very large cups!

Meyer Lemon Mousse Recipe

Judging from what we have left on our Meyer lemon tree, the citrus season is reaching its end. Just as I did with our clémentines earlier this winter, I made a mousse using the last handful of Meyer lemons.

No need to look for cute cups to serve the mousse in; the Meyer lemon rind does the job splendidly.

Kheer Recipe (Indian Rice Pudding) Recipe

Kheer is saffron-flavored rice pudding. The difference from the Western version is that the ratio of rice to milk is a lot lower. Only a few handfuls of rice grains are needed. The rice is simmered in a large quantity of milk until the grains burst and become very starchy.

Add a little sweetener and the dish is almost done. The last touch is saffron, which gives that beautiful yellow hut to the rice pudding.

Poached Pears in Chocolate Sauce Recipe

Miniature Forelle pears are poached in spiced syrup made of candied ginger and various other spices. Once softened, the pears are covered with chocolate sauce. 

I prepared the pears a day in advance and the chocolate sauce was made at the very last minute. It took me probably 5 minutes tops. Everyone was pleased, the cook included! The small size of this dessert makes it a perfect finish to a heavy meal.
