Barbecue Tips: Sweet Potatoes Cooked in the Coals Recipe
Our summer season has been filled with pool parties and a lot of barbecues. Grilling vegetables and meat is usually what makes the meals, but who doesn’t love all the yummy side dishes as well? If you’re looking to make something besides potato or pasta salad, here’s a delicious and not so ordinary suggestion: baked sweet potatoes, cooked in the coals or in ashes. Sweet potatoes are so much healthier than regular potatoes and the kids love to scoop the smooth and velvety sweetness.

Roasted Creamer Potatoes

Creamer potatoes are potatoes that are harvested while they're still young. I recently bought these apricot-sized potatoes at the farmers' market. They were so cute, I couldn't resist!

I roasted them whole with skins on and rubbed them in butter flavored with oregano flowers from our garden. The potatoes have a crisp-skin on the outside, while the inside is tender and moist. If you can't find creamer potatoes, you can use Yukons that have been cut into quarters, but it's not the same as having each bite wrapped in crispy potato skin. Mmmmmm.

Grilled Tomatoes (Simple Barbecue Recipe)  Recipe

This tomato recipe is simple but so flavorful. I always make it when we barbecue. Unfortunately, this year was horrible for the tomatoes from our garden. Lulu planted two dozen tomato plants. I was so ecstatic about getting sweet, juicy tomatoes, but the gophers killed all our plants. If you have a cure for a gopher infestation, please send me a message. Anyway, since we didn’t have enough from our garden, I bought plum tomatoes from the farmers' market for our 4th of July barbecue.

Grilling tomatoes only requires skewers, garlic, oil, salt and pepper. To make it more flavorful, I thread the tomatoes onto oregano sprigs. Once the tomatoes are cooked, I drizzle them with shallot vinaigrette. They're best when they're still warm. Yum!

Easy Barbecue Chicken Recipe for July 4th Recipe

I have been grilling a lot of poultry lately on the wonderful barbecue grill we purchased this past Memorial Day weekend. I’ve made tandoori chicken and soy sauce quail and they both turned out lovely. I thought it was time to experiment a bit and create a new recipe for the upcoming July 4th weekend. I had a jar of delicious chokecherry jelly that Daddy's friends from Minnesota gave us, and I decided to make a marinade and glaze out of it. The jelly imparts a tangy sweet flavor to the chicken that is perfect for a hot summer day.

Pasta Shells with Grilled Portobello Mushrooms (Pasta Salad Recipe) Recipe

Pasta dishes are always a favorite in my house and this green pasta shell dish is no exception. I decided to experiment with the new barbecue we bought over Memorial Day weekend, so I grilled some tandoori chicken for an alternate version of this recipe. Before cooking the meat, I also grilled large Portobello mushrooms for the vegetarians in my family. I love using this kind of mushroom; they are meaty and add so much flavor to a dish. To finish the preparation, I flavored the pasta with a sweet basil oil, green and pink peppercorns, lentils and onions. The sweet basil oil has a pungent flavor, thanks to the addition of garlic.

I consider the dish relatively healthy as it's vegan. No cheese, butter or cream are involved, but that doesn't mean the dish lacks flavor. What I love most though about making this pasta dish is that you could serve it warm, or bring it along with you for a picnic and serve it at room temperature as a pasta salad. The weather is getting so warm in the Bay Area that it's time for us to get all the blankets, picnic bags and ice cooler from the attic and enjoy meals outdoors for many weekends to come!
