Chocolate Ganache Tart (Halloween Ghost Dessert) Recipe

The girls have reached the end of the first quarter, so their school gave them a day off. With Halloween just around the corner, I thought it would be fun for all of us to work on ideas for spooky desserts that they'll be able to share with their friends. It didn't take a lot of arm twisting to convince them!

I decided that we should make a simple chocolate tart and decorate it with ghosts. The tart shell is a shortbread crust that I topped with a semi-sweet chocolate ganache. To enhance the flavor of the chocolate, I added a little coffee. I let the girls pipe the top with vanilla buttercream frosting and create faces using chocolate sprinkles. As an added bonus, this dessert is egg and nut-free. We'll make smaller versions at the end of the month for when they share them with friends.

Eggless Dessert: French Crepe Recipe Recipe

This eggless crepe recipe requires less liquid than regular crepe batter, along with a bit of baking powder. You could serve them as is, or you could add your favorite filling. This time around I smothered the warm crêpe with butter, added a layer of apricot preserves, topped it with sweetened whipped cream and finished with fresh fruits.

Most French desserts contain eggs, but as I’ve mentioned in the past, one of my sisters-in-law is allergic to them. I’m always trying to find ways to make egg-free alternatives to please her sweet tooth. After many attempts, I’ve found that crêpes translate incredibly well without eggs, perhaps better than any other treat. Being able to watch her enjoying the dessert with a wide smile across her face makes it all worth it!

Coconut Milk Ice Cream Recipe with Chestnut Swirl Recipe

This recipe proves that vegan doesn't always mean healthy. Coconut cream, coconut milk, sugar, pure vanilla extract, chestnut purée and stabilizers combine to make a vegan ice cream recipe that tips the scales at about 3000 calories per quart (that's 375 calories per serving). But there aren’t any eggs or dairy products!

I recently received a request for a vegan ice cream recipe from Leslie. It was the first time I tried making a vegan dessert. I made use of the same combination of stabilizers I use in other egg-free recipes, namely soy lecithin and xanthan gum. I increased the quantity to improve mouth-feel though. Xanthan gum in particular inhibits the formation of ice crystals, which create a more pleasing texture.

After tasting the final product, everyone in the house agreed that the ice cream strongly resembled chè, a very popular Vietnamese dessert. I hadn't anticipated that at all. Since I swirled the ice cream with chestnut purée, I thought it would have a more French flavor to it, but that was not the case. That's one of the things I love about cooking. I really enjoy experimenting, and the results of these culinary adventures can add completely new recipes to my repertoire.

My husband Lulu has decided to leave the ice cream maker on the kitchen counter until the end of summer to encourage us to make ice cream more often this year. I’ll post our concoctions on here all summer, so at least some good can come out of my impending weight gain. Stay tuned!

Red Cabbage Coleslaw with Buttermilk Ranch Dressing Recipe

This recipe was inspired by a dish described to me by Chef Doreen T. Ross. We "met" through PhamFatale.com and we've exchanged several emails about dishes. She recently made a plate of very successful fish tacos that used cabbage coleslaw instead of the more traditional choice of lettuce. Doreen made her coleslaw with a buttermilk ranch dressing that sounded delectable. I had to try it myself, so today I tried to recreate the coleslaw that Doreen described to me as a stand alone dish.

I adapted the recipe so the vegetarians in the house could partake, which means there are no eggs. If that's not an issue for you, a standard egg-based ranch dressing would work fine. To make vegetarian ranch dressing, I usually incorporate silken tofu, but as I started working on the dish I realized that I had bought the wrong kind at the store. I had liquid soy lecithin and xanthan gum in my pantry, so I used those instead. If you're familiar with egg-free recipes, xanthan gum and lecithin are an excellent egg substitute.

I didn't think my first iteration of the buttermilk ranch dressing had enough of a kick on its own, so I melted blue cheese and added champagne vinegar to the mix. Because of its rich color, shredded raw red cabbage seemed like the right canvas to showcase the light-colored dressing. I paired the cabbage with cubed Granny Smith apples for a little sweetness and additional color contrast.

The result is an unexpectedly complex and flavorful dish. It was a big success at my house, so I have to say thanks again to Chef Doreen for the tip!

Mediterranean Chorizo Pasta

Mediterranean food usually reminds me of a warm summer evening but it's great during the winter season as well. All the ingredients for this pasta dish are available year 'round. I used whole wheat elbow pasta, chanterelles (girolles in French), crimini mushrooms, marinated artichokes, black olives, vine mini sweet peppers (orange, yellow and red), capers, plum tomatoes, soy chorizo (or the non-veggie version, depending on your preference) and caramelized onions.

I wanted to make comfort food for my husband that is flavorful while still being healthy for him to eat when he comes back from the gym. Comfort food doesn't always have to be cheese pasta. Of course, if you're not watching your weight, a little cheese sauce would go great!
