Yam Burgers with Roasted Brussels Sprouts Recipe

I hope you had a lovely, relaxing Thanksgiving weekend. We decided to escape the Black Friday craze and stayed home, baking and cooking a lot. I still had a loaf of artisan bread, a few yams, roasted Brussels sprouts, miso gravy and cranberry sauce left.

The obvious dish that came to mind was to make "yamburgers". I served them in toasted brioche buns with cranberry sauce and a roasted garlic butter spread. They fit my Meatless Monday tradition perfectly!

Truffle Mushroom Risotto Stuffed Baked Apples Recipe

This is an upscale version of risotto that you could offer as a side dish (or main vegetarian course) on Thanksgiving. I love including lightly sweet ingredients in savory dishes, so I came up with the apple and mushroom risotto. I used Jonagold apples, brown mushrooms and truffle butter. 

I think making individual servings give a more elegant look to the dish, so I nested the luxurious risotto in baked apples. The apples almost turned into apple sauce which paired beautifully with the risotto.

Roasted Cauliflower Pumpkin Soup Recipe Recipe

I hope it's not going to be too cold next Thursday for our family gathering. But I'm keeping this soup recipe as a “maybe” in case the temperature drops too much and we crave something soothing and warm. 

To ensure the soup keeps up the Thanksgiving theme, I used a combination of fall-friendly veggies like pumpkin and roasted cauliflower. I also added duck prosciutto for texture and thyme-infused whipped cream for extra creaminess.

Maple Glazed Tofurkey Legs

I'm going to be posting several Thanksgiving-inspired dishes in the next few weeks. Turkey is, for obvious reasons central to the Thanksgiving meal, but if you're a vegetarian like my husband Lulu, Thanksgiving is also synonymous with many other dishes. I'll share them with you but since it's Monday, I'm going to continue to support the Meatless Monday campaign that encourages people to not eat meat on Mondays to improve their health and the health of the planet.

Tofurkey is a great meat substitute for the holiday. Making your own faux turkey isn't that complicated. I prepared a chickpea and crouton filling. I used thin lemon grass stalks to resemble the turkey legs and wrapped the whole thing in tofu skin. I cooked the tofurkey legs with fried tofu pieces and white cabbage. The glazing of maple syrup and soy sauce completed this tasty dish. This homemade meat-substitute is not only delicious but also packed with protein.

Creamy Spinach Risotto Recipe

I've prepared countless variations of risotto dishes in the past, but risotto is so versatile that there are always new opportunities for creativity. I prepared a creamy spinach version when Sunny's friend Maia stopped by for dinner recently. I hadn't started making dinner yet and immediately gravitated to the creamy rice dish. I combined Vialone Nano rice, Pecorino cheese, fresh spinach leaves, onions, garlic and a touch of heavy cream. 

I haven't hit the gym in a month and I won't be able to get back in the groove any time soon as my schedule is booked from morning 'til late at night. So with holiday season right around the corner, I can already venture a guess as to what my New Year’s resolution will be. Although I’m enjoying food to the fullest, I’ve been trying to (at least) maintain portion control.
