Eggplant Israeli Couscous with Pistachio Pesto Recipe

I don't often cook with toasted Israeli couscous. It's not because it's complicated to prepare, it's just that it's not a very common ingredient to find at the market. I personally like it because it can simply be boiled and serve as a side dish. I flavored it with puréed Japanese eggplant and a bright, sweet and tasty pistachio pesto.

I served the warm, green Israeli couscous with veal scallopini, which was absolutely delicious. There was some extra pistachio pesto, which I stored in the freezer for future use. I don't know what I'm going to cook it with, but I can tell it will be scrumptious!

Brussels Sprouts Risotto Recipe

Roasting vegetables is probably the best way to showcase the flavor, particularly the sweetness, of a vegetable. At the market this past week, I found some beautiful Brussels sprouts, which are one of Lulu’s favorite vegetables. I really enjoy them as well, especially when roasted. You can use them as a side, or as I did in this risotto, as the primary flavor in a main course.

Brussels sprouts risotto is synonymous with winter; it's succulent, creamy and the ultimate comfort food. I didn't add any cream though, just a touch of herb fromager d'Affinois at the end. To make the dish, I roasted some Brussels sprouts until soft, caramelized and tender and used them as a base to flavor risotto. I also added chopped Brussels sprouts to vegetable broth so the rice is bursting with the taste of the root vegetable.

Risotto is fairly easy to prepare, and a great showcase for fresh ingredients. My trick for consistently preparing quality risotto is to cook the grains of rice in a little oil so they don't stick to each other too much. Then, warm broth is incrementally added until the risotto is cooked to perfection. My husband Lulu loved it and I'm sure if you give this recipe a try, you will too!

If you're Vietnamese, you've probably heard your mom say "tội chết" ("dreadfully sinful" in Vietnamese) in regards to wasting food. The lesson was definitely hammered into me, and now that I'm an adult, I intend to follow in my mom's footsteps and teach the same values to my daughter.

I love Acme brand green onion slab bread. It's very flavorful, moist and delicious. I went a little over-board buying 4 loaves at Costco. I made panini sandwiches the day before and had one left-over on the kitchen counter. Today, my goal was to come up with a creative way to use it all. I made stuffing using the onion bread with ground beef, artichoke hearts, tomato paste and mozzarella cheese. I moistened the bread with beef stock I had stored in the freezer. It makes a wonderful one-dish meal once the little casserole dish is heated and broiled in the oven. And if the slightly stale bread didn't have green onion in it, I could have made pain perdu (french toast) as well!

Mache Pesto Risotto Recipe (+Giveaway) Recipe

Remember when I said I always have pesto prepared in advance and stored in the freezer? This recipe doesn't require a lot of effort if you already have pesto on hand. Today I made risotto with my favorite pesto recipe, made with mâche leaves. In case you’re not familiar, mâche, or lamb's ear lettuce, is a small-leaved, brightly-colored green. It has a mild but very distinct flavor.

First, I cooked Carnaroli rice with vegetable stock until tender. Once the rice absorbed all the liquid, I added the mache pesto, caramelized onions and Parmesan shavings. This simple recipe makes a quick and easy comfort food fix in less than 40 minutes.

Pumpkin Mac and Cheese Recipe

As I spent my childhood in France, Thanksgiving wasn't part of our traditional feasts. I’ve come to believe that Thanksgiving is synonymous with an abundance of comfort food. My personal all-time favorite comfort food is mac and cheese, so I tried adapting the dish with the flavors of the holiday season. I added diced pumpkin to the traditional layers of macaroni, white sauce and string-y, melted cheese. The pumpkin infuses a mild sweetness into the dish and really adds another dimension. It also doesn’t hurt that the colors are so reminiscent of Thanksgiving.

Mac and cheese is a great dish that is suitable all year round. You can flavor the dish with your favorite ingredients such as morel mushrooms, red pesto or any combination of cheeses. If pumpkin isn’t your thing, make your own pasta gratin creation; let your imagination run wild!
