Camembert Stuffed Fig Puffs

I went into the garden today and I noticed we had a huge crop of Black Mission figs. I think I gathered probably two full baskets. We had some last minute guests come over this afternoon, and I decided to put the figs I just picked to good use. Since they were coming over for tea, I thought that bite size appetizers would be in order. I stuffed the figs with camembert and some thyme from the garden. I then rested each fig on a bed of puff pastry and baked them in the oven. 

A lot of my cooking is my own improvisation. If you know what flavors combinations work well together, it's easy to come up with new recipes when you're in a pinch. Figs stuffed with camembert is a classic combination, and really, what doesn't puff pastry go with?

Unfortunately, I didn't have any ready-made puff pastry, so I had to make some myself. The result isn't as beautiful as Julia's from Mélanger, but it also didn't take six hours to make! I have to give a special shout out to Julia for taking the effort to make pâte feuilletée at home. 

I think our guests enjoyed the little bite-sized fig appetizers. You could make a similar dish with many other fruits, so experiment and have fun!

Mediterranean Mini Pizza with Cannellini Beans and Roasted Red Bell Pepper Hummus Recipe

I made a hummus pizza a few days ago and I felt like recreating a sandwich version of the dish with a bunch of Mediterranean ingredients. The problem was that I only had pita bread at home. I could have created a pocket in the bread and stuffed it, but I decided to place the ingredients on top of the pita bread to create a meal that resembled a pizza.

Following the Mediterranean theme, I made a cannellini bean and roasted red bell pepper hummus-like spread and topped it with Greek feta cheese, capers, sun-dried tomatoes, arugula, pickled shallot, black olives and marinated artichoke hearts. For the meat lovers out there, I would add some cubes of lamb kebabs.

I'm sure you've heard of 30-minute meals, but this took me 10 minutes, tops. Try this recipe the next time you're in a hurry. Beat that, Rachael Ray!

Hash Browns with Goat Ricotta and Chorizo Recipe

Lulu worked from home today, so I brought him breakfast in bed. I love this little ritual we have once in a while. It's my way of showing him how much I love him. I love seeing my hubby's smile when I give him special treats in the morning.

I made some hash browns with goat ricotta cheese and placed a surprise vegetarian chorizo in the center. The chorizo adds a little spiciness to the dish without overpowering the hashbrowns and also some protein. The goat cheese has a tangy taste and velvety texture that complements the other components of the dish quite well.  There's nothing wrong with good ol' fashioned hash browns (we get them from the local pancake house all the time), but if you're in the mood for something a little different, this is a great recipe to try.

Croque Madame Sandwich Recipe

My little munchkin loved the croque-monsieur and she asked for the same lunch the next day. I decided to make another version of the same sandwich: the famous croque-madame. The croque-madame is essentially a croque-monsieur topped with a sunny side up egg.  If you ever get confused about which sandwich is which, just remember that the "female" version is just like the "male" version, but with extra flavor .

I added ketchup and flat-leaf parsley to create the face of an angry clown to make the sandwich kid-friendly and more playful. In case you were curious, she loved it!

For those of you who are wondering if the croque-mademoiselle exists, it does! It's supposed to be more delicate like a diet version, with whole wheat bread.

Croque-Monsieur: A Perfect Back To School Lunch Recipe Recipe

In France, the croque-monsieur sandwich is as much a staple of school children's lunches as the PB&J is in America. I grew up with them, and they are still the ultimate comfort food for me. 

The girls are going back to school today and I wanted to share with them one of the fondest culinary memories of my childhood. When I was in middle school, I would come home early on Wednesdays. Since I didn't eat lunch at school, I would always make myself a croque-monsieur.

Croque-monsieur is super easy to make. All you need is a few ingredients such as sliced white bread, emmental cheese and ham (I used smoked turkey). To make it fancier, I bind all the ingredients together with a Mornay sauce, which is basically a béchamel with cheese. I use béchamel a lot; it's really just a white sauce made of flour, butter and milk.
