Red Cabbage and Bean Sprout Salad Recipe Recipe

I had leftover bean sprouts from a large pot of phở over the weekend, and I decided to make a salad with it. The color of the bean sprouts needed a little oomph, so I added shredded red cabbage. In addition to the red cabbage, I also used diced Fuji apples.

Given the Asian flair of the salad, I made a peanut, lime and condensed milk vinaigrette. This is a very quick and easy first course, which gave me some time to work on a delicious dessert to satisfy my husband's sweet tooth for Valentine’s Day.

Fingerling Potato Salad Recipe

Fingerling potato salad is a very easy one-course lunch meal I throw together when I’m in a hurry. To make the dish, fingerling potatoes are steamed until softened. These would be great on their own, but to make it a complete meal I added crunchy Romaine lettuce, sliced celery and Persian cucumbers.

The vegetable salad is then mixed in a yogurt vinaigrette dressing, which remains very healthy without sacrificing flavor. I also added a few slices of smoked salmon on the side. The dish is light, but it still keeps me energized until dinner time. I could eat this salad every day.

Grilled Vegetable Summer Pasta Salad Recipe Recipe

After the pool party we recently hosted, we had lots of leftover grilled vegetables. Pasta salads are a great way to make use of leftover veggies, so today I prepared some for the family. It was really easy; all I needed to do was boil some pasta and add some salad dressing to it.

This time around I made a spicy salad dressing that I drizzled over fusilli pasta, roasted bell peppers, grilled eggplant, grilled Portobello mushrooms and sun-dried tomatoes. This meal met everyone's diet, except for my father-in-law who's allergic to mushrooms (no meat, not nuts, no eggs), so I placed the grilled mushrooms on the side.

Healthy Grapefruit and Bok Choy Salad Recipe Recipe

I felt like making a low-fat salad today because my husband Lulu and I have been diligently working out every day. I bought beautiful pink grapefruits at our local market, so I used the sweet and slightly acidic fruit in the salad. Bok choy and roasted bell peppers rounded out the flavors and textures of the dish. I finished it with a tahini and miso salad dressing that really bound the flavors together.

Even though the meal was low in calories, it was so flavorful. The salad  nicely complemented the grilled cod and soy gluten I prepared for Lulu and me. The best part is that even though he is a vegetarian and I eat meat, we were able to share a meal together.

French Rice Salad Recipe

Salade de riz aux légumes is my attempt to serve my family healthy food that doesn't sacrifice flavor. As you may have noticed, I have a tendency to make food that is a bit rich. We're all trying to workout more and get into good shape, and while I won't ever give up butter and cream, I've learned that I don't have to put it in every dish.

The rice salad is made with a blend of both brown and white rice for a balanced texture. I also added a mix of vegetables that are available this time of the season (the zucchini and squash are from our garden). I used fresh steamed corn, roasted bell peppers, diced tomatoes, grilled eggplant, edamame and tofurkey.

Since there is no cheese involved, I was afraid the rice salad would lack flavor, so I made spicy vinaigrette. Since I still need "real" protein besides the edamame beans and tofurkey, I added smoked turkey in a separate batch. Everyone enjoyed it, myself included!
