Cucumber Dill Salad with Tzatziki Dressing Recipe

I wanted to prepare a simple salad for dinner this evening, so I made a cucumber salad with a really easy to make tzatziki dressing.

Prepping the cucumber takes only a few steps. I wash, chop, salt and pat dry the cucumber slices and they're good to go. The tzatziki sauce is made of dried mint, dill and yogurt and is seasoned with salt and pepper. If you want to make it extra rich, you can add some sour cream or crème fraîche. Mix them together and you're ready to serve. That's it. Easy never tasted so good.

Edamame and Celery Salad with Roasted Peppers Recipe

I'm getting ready for our anniversary trip, so I haven't had a lot of time to cook. My aunt from Vietnam just came for a visit.  She happens to be a vegetarian as well. I met her seven years ago when she came to visit my family in Paris. I remembered that she loves edamame, or baby soybeans boiled in salt water.

I decided to make a nice salad for her that incorporated edamame. I added roasted red bell pepper, perlini mozzarella and celery, along with Beluga lentils for color. I made a dressing with garlic, sherry vinegar, Dijon mustard and walnut oil.

The salad has a really nice contrast of flavors, colors and textures. If you've never tried edamame before, this is a great way to get acquainted with this tasty ingredient.

Falafel Salad with Lemon Tahini Vinaigrette Recipe

During our last trip to Philadelphia, Lulu and I realized how narrow the vegetarian options were in restaurants. Lulu had falafel during the entire time of our stay there.

He hasn't touched it since we got back and I thought it was time to re-introduce him to falafel. I served them in a Mediterranean-style salad along with lemon tahini vinaigrette, candied walnuts and thinly sliced kumquat preserves from last winter's harvest.

Wild Rice and Orzo Salad with Maple Vinaigrette Recipe

This dish is really three recipes in one. I combined my wild rice, kidney bean salad and orzo pasta salad recipes together to make a light and healthy meal. The maple vinaigrette helps tie everything together.

I usually make orzo pasta salad for parties and picnics, but we've been having a heat wave here and we all felt like eating something cool. The addition of kidney beans for protein and wild rice for fiber makes the dish more of a complete meal. If you have some leftover roast chicken, you can dice or shred it and add it to the salad as well.

Tarragon-flavored Grilled Vegetable Party Platter Recipe

Tarragon is a wonderful perennial herb. Last year, I was telling Lulu my wish to add tarragon to our herb garden. We were clueless about how to plant it. First, we made a big mistake when we bought Russian tarragon, which is very weak in flavor. The best is the French variety, but of course it is . It has a nice anise, "licorice-y" flavor. Anyway, now we have 4 beautiful French tarragon plants that are very vivacious. We have so much that I came up with a recipe for grilling summer vegetables that uses tarragon in two ways; first on the grill while I'm grilling the vegetables, and second as a tarragon-flavored vinaigrette. The result was, surprisingly, very nice.

I need some more ideas on how to use all the tarragon left I have. I'm open to any suggestions. I'll try to make your recipe and post a picture.
