Cucumber and Yogurt Salad Recipe Recipe

I'm still working on using the cucumbers from our garden. I know my husband Lulu spent a lot of time planting all the vegetables so I try my best to make flavorful dishes using the results of his hard labor. 

Today I used Marketmore cucumbers and served them as a first course. The dish was composed of seeded, sliced cucumbers, finely chopped pickled grape leaves and diced red bell peppers. I tied the flavors of the salad together with a dressing made with yogurt, mustard and olive oil.

I understand that the process of planting, watering and caring for the vegetables requires a lot of work, so I definitely feel responsible for creating unique dishes that showcase the quality of the ingredients. Love you Lulu! Don't we make a great team?

Kiwi Spinach Salad Recipe

I love incorporating fruit into savory green salads. Stone and citrus fruits work great, but today I mixed kiwis into a colorful and healthy salad made with spinach, romaine lettuce, carrots and olives. My favorite element in a salad is the dressing, and for this particular salad I made a chevre flavored vinaigrette. The creaminess from the goat cheese gives a richer mouth-feel and adds a few more calories to keep me primed for the rest of the day.

Served with a few Parmesan bread twists, this makes a wonderfully light meal. Give it a try!

Kale Potato Salad Recipe

Since the girls are on summer break, they've asked to join me in my morning workouts. After our workout is done, I put them to work helping me make lunch. A refreshing smoothie at the end of a jog is all the incentive they need!

Cooking with kids is a great way to instill healthy eating habits. Today we prepared an iron-filled potato and kale salad. We also added sugar snap peas, asparagus, tomatoes and a little cheese.

Arugula Salad with Pesto Vinaigrette Recipe

I'm often asked what makes a salad delicious and my immmediate response is the dressing. You can make it very simply with vinegar and olive oil, but this time around I used the elements from the salad itself to increase the flavor.

The salad dressing is a combination of arugula, mâche, pine nuts and green olives. Sprinkle a little crumbled feta cheese and the salad is complete.

Pommes Anglaise: Pesto Potato Salad Recipe Recipe

Pommes à l'Anglaise is just a fancy name for boiled potatoes. Once the potatoes were cooked, I coated them in pistachio radish pesto (I still had more radish greens in our garden) and softened the spicy flavor of the greens with yogurt.

The preparation is super easy, and this dish will go fast!
