Black Bean Tofu Recipe

This is a simple vegetarian recipe, but simple doesn't mean that it lacks flavor. I pan-fried thick slices of tofu until the outer layer was very crispy, then quickly sautéed it with fermented black beans and snow peas. The greens were still crisp and provided a great color to the dish.

Vegetarian Stir Fry Recipe: Tofu with Beans and Carrots Recipe

I hadn't cooked tofu in a while and my husband Lulu asked for a vegetarian stir fry. I've wanted him to eat healthier, so I was happy to oblige. The base of the stir fry contains carrots, green beans and onions from Full Circle. To this, I added some kumquat jelly I made last winter (you could use any kind of sweetener you like) and a mixture of fresh garlic and red Thai bird chiles Lulu planted early this Spring. It's just the right combination of sweet and spicy, and I love that the recipe is flexible enough to make use of whatever you have on hand.

Spicy Eggplant Tofu Recipe

Japanese eggplants cook fairly quickly and this stir fry sauce consists of basic ingredients such as soy sauce, chile black bean sauce, palm sugar and fresh ginger. The ginger and black bean sauce enhances the bland eggplant and tofu. All that's left is to steam a few leafy greens and have jasmine rice ready in the rice cooker. It's as easy as 1-2-3!

I barely have time for anything these days, and when I have very little time to cook, my go-to dish is a tofu stir fry. It’s nutritious and it allows me to make use of whatever I have on hand. Learn the basics and you’ll be able to dazzle your family with creative stir fry dishes.

Tofu Stir Fry Recipe

Catering to a large crowd of vegetarians in my house, I often find myself cooking a lot of lentils (or any legumes) and tofu dishes. I realized I haven't cooked any tofu in quite some time, so I made my quick and easy tofu stir fry this evening. I sautéed a bunch of vegetables (Brussels sprouts, straw mushrooms, zucchini and red bell peppers) that I had on hand and mixed them with the tofu.

My husband loves this dish and says he could eat the same thing every day. I usually serve it with brown rice and a bowl of canh (Vietnamese broth). It's a complete, flavorful meal, plus it's healthy! What else could you ask for?

Muop Tau Hu Xao Recipe (Vietnamese Loofah and Tofu Stir-fry) Recipe

Mướp tàu hũ xào (loofah squash and tofu stir-fry) is a standard in Vietnamese vegetarian cuisine. Mướp (Vietnamese Loofah) is stir-fried along with tofu in black bean sauce and chili garlic sauce. The dish is seasoned with soy sauce and fried garlic. I also added straw mushrooms as a foil to the loofah. It's a very quick and easy dish I often make when I'm in a rush and I want a tasty, healthy meal.

Vietnamese loofah is a very common vegetable in Vietnam that is also used a lot in making canh ("soup" in Vietnamese) because of its natural sweetness and tender texture. You won't be disappointed by this, and if you like it, it’s easy to put together non-vegetarian versions.
