French Soupe au Pistou Recipe (Minestrone Soup with Pasta) Recipe

Soupe au pistou is the equivalent of minestrone soup mixed with a bit of thick, Provençal-style sauce. First, I prepared beef stock (you could also use vegetable stock for a vegetarian version), then added white beans, zucchini, carrot, peas, corn, fresh tomatoes and boiled pasta and finished the soup with a few spoonfuls of a chimichurri-like sauce made of garlic, basil, olive oil and flavorful cheeses.

Aria is old enough to eat on her own with her special baby spoon now and she loved the soupe au pistou! I used regular macaroni pasta but you could use thin pasta or cut-up spaghetti instead. I also incorporated two types of cheeses -- Gruyère and Mimolette -- for flavor. If the stock is prepared in advance, this meal shouldn't take too long to assemble.

King Mushroom Soup Recipe

My husband Lulu craved a hot soup, so I prepared this king mushroom soup. It's very soothing and comforting on a rainy day, which seems to be every day we’ve been in Paris. The broth traditionally consists of beef consommé made with beef bone marrow bones. You could use any clear, thin broth, of course (I used vegetable stock for my husband Lulu, who's a vegetarian).

King mushrooms are perfect for this dish. Their texture varies depending on the manner in which you prepare them. I tore the mushrooms into long strips instead of cutting them, to impart a very meaty feel. The mushrooms and hot consommé make a wonderful first course in cold weather.

I had a lot of leftover soaked chickpeas after making chole (spicy Indian garbanzo beans), so I prepared a simple chickpea soup. I added potatoes that are invading part of our garden now, onions, a touch of lemon and whatever vegetables I was able to find in the kitchen (frozen corn, carrots and roasted red bell peppers). The result was surprisingly fabulous, especially since it's gluten free, dairy free and low fat. You could sprinkle a few Parmesan shavings for added richness if you like, but since there’s no photographic evidence, I’m going to say I didn't!

I prepared the chickpea soup with the idea that it was going to be for baby Aria, but all the grown-ups in our home enjoyed it just as much as she did. She's old enough to eat meat, fish and other solid carbs but I still prepare soups for her several times a week to ensure she doesn't go too hungry. According to my husband Lulu, she's plenty chubby but I guess through a mommy's eyes, there's always the fear of not providing enough for your baby.

Canh Bun Recipe (Vietnamese Soup) Recipe

Canh bún is a simplified version of bún riêu. It has a similar, red-colored sweet broth except it doesn't contain tomatoes. The soup is also softer in texture; round, thick noodles are used and fried tofu pieces and rau muống (pea shoot tendrils) are added at the last minute. 

Traditionally, pork is used for canh bun but I prefer cooking with veal instead. You could stick to the more authentic version or use other meat and add riêu (crab morsels) as well.

Vegetarian Haleem Recipe

Haleem is one of my husband Lulu's many favorite dishes. It has a velvety consistency and is usually made of pearled wheat germ (sometimes with barley as well), stewed meat (chicken, goat meat or beef shanks), five varieties of lentils and various spices. Since Lulu and his dad are vegetarians, I prepare it meat-free (so appropriate for our Meatless Mondays!). The thick lentil stew is served piping hot with fresh ginger cut into thin matchsticks, daikon pieces, fresh mint (sometimes with dill also), chopped chiles, lime wedges and a garnish of crispy fried onions. 

It used to be a labor-intensive task to turn the mixture into a thick paste, but  these days a food processor makes it easy breezy. Thank you so much to Phoopi (Daddy's sister) who taught me this wonderful dish, despite her extremely busy schedule. Lulu is so excited he wants to eat vegetarian haleem everyday!
