Ultay Pultay Recipe (Indian Chana Pancake Curry) Recipe

Ultay pultay is what my father-in-law (I call him "Daddy"), who's a vegetarian, considers a festive dish. This dish is composed of thin, firmly pressed chickpea pancakes soaked in spicy gravy. The cooking time was a bit a long but seeing Daddy enjoy his meal was so rewarding.

I learned to make ultay pultay from Lulu's paternal grandmother's sister. The entire family calls her Muni Baji in Urdu, which translates to "little sister" in English and she's indeed the youngest of a large brood; Lulu's grandmother was the eldest.

It was a lot of fun learning the curry dish from Muni Baji. She told me a lot of stories about her life in Hyderabad. For instance, the gravy calls for fried onion paste and back in the day, there was no blender so it was puréed by hand!

Nimbu Ka Achar (Indian Lemon Pickle Recipe) Recipe

I've been meaning to post this recipe for a while but Daddy, my father-in-law, kept telling me to be more patient. We harvested our last batch of Meyer lemons more than a month ago. I preserved them by making all sorts of pickles. The method is pretty much the same regardless of the cuisine type, but the spices differ.

Today I'm going to show you how to make my family's favorite, called nimbu ka achar. Halved lemons are pickled in a large amount of coarse sea salt, then flavored with baghar, which is a combination of oil, a lot of spices and a few curry leaves. We enjoy it best with simple, plain basmati rice.

Fig and Farro Stuffed Poblano Pepper Recipe Recipe

I prepared stuffed Poblano peppers in three steps. First, I cooked balsamic shallots until they were very soft and turned almost into a compote. Then, I cooked ground beef in chipotle fig sauce and mixed in plump and chewy farro berries. The last step consisted of stuffing the beef mixture into halved Poblano peppers and baking in the oven until golden.

Today, I used Bellindora balsalmic fig vinegar in this dish. The flavor is wonderful and I think the addition of dried fig spread added more sweetness to the sauce. These vinegars are so versatile!

Pepper Poppers Recipe

Pepper Poppers

04.17.13 by Jackie

If you've been following my culinary adventures for a while, you probably know that Daddy's (my father-in-law) diet revolves around anything spicy. So he rarely eats the French dishes (except for the desserts) or Vietnamese meals I prepare for the rest of our family. So today, I prepared pepper popper appetizers. Who doesn't like fried food? Not even Daddy could say no. I prepared mild ones using mini tri-colored peppers and jalapeno peppers, and a couple of really spicy ones just for him.

Mini peppers are hollowed out, stuffed with a cheese mixture, breaded and deep-fried. You can't go wrong!

Coconut Curry Tofu Recipe Recipe

Coconut Curry Tofu Recipe

04.16.13 by Jackie

I haven't cooked any tofu dishes for my husband Lulu in a while and I thought it would be good to vary his diet. So I prepared tofu with fresh wood ear mushrooms, sweet potatoes, carrots and red bell peppers that I stir-fried in coconut, galangal and turmeric curry sauce.

I topped the tofu dish with a few roasted peanuts to create a contrast in texture and make the dish more fun.
