Scallion Kidney Bean Burger Recipe Recipe

These veggie burgers are prepared with gluten free bread. I made scallion-flavored croutons out of the bread and mixed them with kidney beans. I served the burgers on a bed of scallion and maple-flavored barbecue sauce; if you were putting these patties in a bun, you could always slather the sauce on the inside of the bun instead of on the plate. No mustard or mayo required!

Unlike many vegetarian dishes, these burgers won't leave you dreaming of meat. The texture is interesting and non-uniform, and the flavor is in your face. It's not a meat substitute, but rather a unique dish unto itself. I don't think meat would add anything to the patties and even the most ardent of carnivores should be able to enjoy them as is. Ok, maybe next to a steak or something. But they'd still enjoy it! 

The scallion flavor in this recipe is courtesy of Boyajian's fantastic Scallion Oil. Boyajian has an impressive array of oils, vinegars and vinaigrettes with some pretty exotic flavors. Poha Chudva Recipe (Indian Puffed Rice Trail Mix) Recipe

I was flipping through past recipes on PhamFatale and realized that while I published the picture, I didn’t share the recipe for poha chudva. The difference in this recipe from other chudva recipes is the addition of rich and creamy Brazil nuts. I deep-fried them with other nuts and mixed them with homemade-puffed rice called "poha". It's a great fusion South American and Indian rice trail mix flavored with many Indian spices.

I didn’t make the snack too spicy so the little ones could enjoy it too. We made several batches and packed them in cute Chinese takeout boxes for sharing.

Plantain Stuffed Sweet Peppers

I've spent all summer working out with Lya, my husband's teenage sister. We're not aiming to lose weight but to be healthier and get our muscles toned. We don't diet but we watch what we eat. Today, I prepared multi-colored mini sweet peppers and stuffed them with a combination of mashed plantains, cannellini beans and crushed potato chips. 

I kept the menu gluten free and paired the plantain-stuffed mini peppers with garlicky quinoa. It's amazing how delicious this healthy dish was; it was satisfying, flavorful and quite filling. Now, back to the treadmill!

Scallop Ceviche Recipe

If you're experiencing temperatures as hot as the ones in the San Francisco Bay area, this seafood ceviche might make your mouth water. Chilled scallop ceviche is brightened with heirloom cherry tomatoes, onion, cilantro and key lime. I used fresh, plump scallops that I quickly seared, then transferred into a tangy and spicy "marinade". For a contrast in temperature, I paired the chilled ceviche with oven-baked sweet potato fries, which were incredibly satisfying.

I was inspired by a dish I had in a restaurant in Cancún during our 5th anniversary vacation a few years ago. The only difference is that I added cherry tomatoes and omitted avocados and hearts of palm. I also opted for the larger variety of scallops over baby bay scallops because of their buttery texture.

Spicy Clams in Saffron Tomato Sauce Recipe

This is an upscale version of traditional "moules frites", Belgian bistro-style mussels and fries. I substituted clams for mussels and sweet potato fries for regular French fries. 

The clams are cooked in delicious cherry tomatoes and a pinch of saffron. I'm a little disappointed with the number of ripe tomatoes I was able to pick this morning because of the horrible weather we've had this year in the Bay Area. Nonetheless the tomatoes still tasted incredibly sweet and delicious.
