Porcini Mushroom Cornbread Recipe Recipe

I love making this foolproof cornbread recipe. The only difference between versions is the flavor combination. The list of adaptations is endless. I never have a specific idea of the meal I'm going to prepare on a daily basis. My first reflex is to inspect my refrigerator, then go through the pantry and finally mix and match flavors that can complement one another. That's the beauty of cooking.

This time, I mixed crushed hazelnuts, dried porcini mushrooms and roasted garlic into the batter. The pungency from the garlic, the richness from the hazelnuts and the extravagance of the mushrooms created the ultimate, most luxurious cornbread I could think of. Don't you agree?

Thanksgiving week is here! Today, I hope the medley of dishes I selected will help you find the perfect Thanksgiving stuffing / dressing recipe for your dinner table. There are a wide range of flavor combinations, using ingredients from cornbread to polenta, fruit and herbs, and even sausage.

Turkey may be the center of the show, but it’s not Thanksgiving without stuffing. So this year, dress it up! (I couldn’t resist )

Kale Thanksgiving Bread Stuffing Recipe Recipe

Our Thanksgiving table would be incomplete without vegetarian bread stuffing / dressing. I usually serve it as a side dish so it's a great accompaniment to meat and a main course for the vegetarians in my home. 

For this version, I was inspired by green ingredients such as asparagus, zucchini, celery, artichoke, kale, Castelvetrano green olives and Havarti cheese with dill. I used olive bread, a small white onion and homemade vegetable broth I prepared in advance and stored in the freezer for the upcoming holiday. Give this "green" and healthy recipe a try; it might bring a new kick to your Thanksgiving menu.
