Asian Noodle Salad with Peanut Salad Dressing Recipe

We went to a potluck this weekend, and I brought along an Asian-inspired salad. I wanted to serve it as a main dish, so I made a pasta salad loaded with tofu and vegetables. But instead of using regular pasta, I used thin egg noodles. I mixed a myriad of vegetables such as crimini mushrooms, baby zucchini, cauliflower, bok choy, sugar snap peas and pickled red peppers with fried, cubed tofu. To finish the dish, I covered it in a delicious peanut dressing made of peanut butter, chili garlic sauce, sugar cane vinegar and ponzu soy sauce.

This cold Asian noodle salad can be prepared hours in advance, making it perfect for picnics and potlucks. Just leave the peanut salad dressing on the side and mix right before serving.

Roasted duck soup combines succulent roast duck with an incredibly flavorful broth. I cook the roasted duck remnants with beef bones and let them simmer for hours until the broth is sweet and delicious. I then complete the soup phở-style. By that, I mean, egg noodles are quickly boiled, then covered with the broth. The soup is finished with pieces of roasted duck, steamed bok choy and bean sprouts for extra crunch.

To me, the key to making great soup is to focus on the broth. It takes a lot of patience to get the flavor of the broth just right, but I think it's so worth it.

Canh Bi Do Tom Recipe (Vietnamese Pumpkin and Shrimp Soup) Recipe

Canh bí đỏ nấu tôm tươi literally translates to "pumpkin soup cooked with fresh shrimp". The natural sweetness from the shrimp pairs wonderfully with pumpkin. My mom’s trick to give the shrimp a better consistency is to blend in a few baby squid with the shrimp. If that scares you, you can omit it; the soup will still be yummy.

Soy Gluten Stir Fry Recipe

Soy gluten is one of those rare ingredients that can make me forget about meat. Unlike tofu, soy gluten has a chewy texture that gives more body and consistency to the dish.

Even though I'm a meat eater, I've been craving lots of vegetarian food and fish lately. So today, I stir-fried soy gluten and vegetables with the usual flavorings, such as black bean sauce, chili garlic sauce and soy sauce and then added Thai basil to finish the dish. I’m eating healthier without sacrificing taste, which is a delicious compromise!

Braised Straw Mushrooms (Nam Kho Ca Recipe) Recipe

Nấm kho cà tô mát, which translates to "braised mushrooms in tomatoes" in Vietnamese, was my late grandma's (Bà Ngoại) specialty. Bà Ngoại was an excellent cook; she mastered vegetarian cooking in particular. This dish resembles sweet tomato beef because of the texture of dried straw mushrooms in the sweet and sour sauce. The preparation is fairly simple. A lot of garlic and a fair amount of different soy sauces (zesty, sweet and salty) really make the dish flavorful. The sweetness and tanginess from the fresh tomatoes gives the final touch for this quick side dish.

As a child, I didn't come often to Vietnam to visit my grandma but I always remember all the wonderful stories she told me. Bà Ngoại used to be the director of a Saigonese school and was proud to educate and empower Vietnamese women through various disciplines, including culinary arts among others. I remember she was a very strong-minded lady who really represented the essence of Vietnam. I'm not saying this just because she was my grandmother, but she was such a great role model, always dedicated to excellence and so devoted to her children, especially during times of crisis. She was an admirable woman.
