Vietnamese Chicken Rice with Ginger Fish Sauce Recipe

If you're Vietnamese, you probably heard your mom telling you when you were a child not to waste food because it's "tội chết" (dreadfully sinful). Yesterday, I made gà muối ớt (salt and chile chicken) and there was no way I would toss the precious, flavorful chicken broth. So what to do with all the leftover broth? I made chicken rice with it.

The preparation is similar to making basmati rice, with the main difference being that jasmine rice is used. Jasmine rice is a lot trickier to cook though, because the rice will get mushy very quickly if you don’t keep an eye on it. 

I served the rice with nước mắm gừng, which is ginger-flavored fish sauce. I wanted to make the flavors more intense so I used pure sugar cane juice instead of regular water. This dipping sauce is so good, I could drink it all by itself!

As you may have noticed, I love sharing cooking tips. I recently told our family friend Cô Hoa that chicken salad tastes so much better if the chicken is boiled in fried-onion flavored broth. She invited us over to her house and we made a món ăn Miền Trung, "Central Vietnamese dish" in Vietnamese, called gà muối ớt (salt and chile chicken). The recipe is ultra simple. Cô Hoa assured me that all you need is the freshest chicken possible, ginger, a little chile and salt. Nothing more, thing less. The chicken is cooled to room temperature, then shredded and mixed with rau răm, a fragrant Vietnamese coriander.

You could either store the leftover chicken broth in the freezer for future use, or on the next day make cơm gà Hải Nam, which is a flavorful chicken rice. Nothing goes to waste!

Cold Rice Salad with Papaya

We finally have beautiful sunshine in the Bay Area. We've been waiting for the sun for so long that today, in honor of our quite overdue patron of summer, I prepared a dish that is refreshing, healthy and flavorful.

Specifically, I made a cold rice and papaya salad. I boiled brown rice, and mixed in vegetables, steamed lentils, lime juice, ginger and fresh papaya. The key to good rice salad is to have a homogeneous mixture. All the ingredients should be cut the same size. The other factor for a good salad in general is a flavorful dressing. I met that requirement with a sweet and spicy papaya ginger dressing.

This version is vegetarian, but you could also finish the salad with grilled jumbo shrimp in shells or grilled chicken breasts. Also, I served it in tea cups. For an original presentation, you could serve it in papaya halves. Here comes the sun!

Banh Khoai Mon: Fried Taro Cake Recipe Recipe

Fried taro is a dish I enjoy a lot whenever we eat a dim sum place. It's starchy, filling, salty and of course, who would deny fried food? But I can make the exact same dish at home for a lot less.

To recreate this recipe at home, I pan-fried cubed bánh bột khoai môn (taro cake), then sautéed the taro pieces with dried shrimp, mushrooms, coarse sea salt and parsley. How easy is that?

Korean BBQ Beef Ribs

Even though the weather wasn't as sunny as I would have expected, we still used our barbeque grill this weekend. Specifically, we grilled 3 pounds of Korean-style beef ribs. We devoured and licked every piece until there were only bones left. I buy beef ribs at a local Korean store; you'll notice there are 3 types of ribs. I always choose the most tender one, which is the most expensive. In addition to the finest quality of meat, I always marinate the meat with a sweet tenderizer: Asian pear. I've used papaya paste in the past as well as buttermilk, but I find that the fruit purée adds a pleasant sweetness to the grilled meat dish.

I usually serve these with a bowl of steamed jasmine rice and pickled cabbage on the side. However, I would recommend eating them in moderation because of they're high in cholesterol.
