Ca Kho Gung Recipe (Catfish Recipe) Recipe

Cá bông lau, "catfish" in English, is a very common fish in Vietnamese cooking. There are numerous preparations, and I've shared some in the past. Today, I prepared a caramelized sauce made of ginger and kaffir lime leaves called cá kho gừng to go with the catfish. It gives the fish a lovely light brown color.

The addition of kaffir lime leaves and red chiles gives a special zing to this seafood dish. And as usual a bowl of freshly made white jasmine rice makes a superb pairing!

Sweet and Sour Soup Recipe

Here's a quick and easy recipe I came up with to make use of the leftover plum roasted chicken I made over the weekend. I shredded the meat and added it to chicken stock I had stored in the freezer. A few additional ingredients, including enoki mushrooms, shiitake mushrooms, cubed silken tofu, lily buds, kaffir lime leaves, young bamboo shoots, plum sauce and lightly beaten eggs and you have a lovely bowl of sweet and sour soup. The sweetness from the plum sauce provides a nice contrast of flavor with the freshness from the kaffir lime leaves.

Since the chicken and chicken stock were ready to go, it took me almost no time to prepare the soup. So basically, an investment of one afternoon spent preparing chicken is already paying dividends!

Poached Carp Fillet Recipe

Today I found beautiful silver carp fish fillets at the market. I decided to oven poach the fillets, which makes the preparation pretty quick. The cooking time is very approximate as it depends on the size of the fillets and the baking dish. I usually watch the fish closely as soon as the poaching liquid starts bubbling. The fish will become opaque and will shrink up slightly when it's done.  

I made a caramel sauce to accompany the fillets using sugar, coconut soda, fish stock, leeks, wasabi, kaffir lime leaves and black pepper. It’s so tasty, it could make just about anything taste great!

Vegetarian Spring Rolls: Bi Cuon Chay Recipe Recipe

For this dish I made a traditional  bì chay with jicama, tofu, a protein element and soy sauce dipping sauce. Then I wrapped the tofu mixture in rice paper disks, forming tasty and healthy spring rolls. Rice vermicelli noodles, shredded lettuce and cucumber were added to form the rolls as well.

Once you master forming the spring rolls, you can experiment with many different combinations of noodles, vegetables and protein. Just try to maintain the same ratio of ingredient types as in this recipe.

Vegetarian Hot and Sour Soup Recipe Recipe

Hot and sour soup is a wonderful first course. It's bursting with strong flavors such as kaffir lime leaves, chiles and lime juice. To balance the dish, cubes of silken  tofuwater chestnuts and  wood ear mushrooms are added. I also thickened the broth with tapioca starch.

The girls and I are still keeping up with our daily workout routine, starting in the wee hours of the morning while the baby is sleeping. After completing our exercise, we all discuss what the menu of the day is going to be. Fun time!
