Broccoli Puree (Mashed Broccoli) Recipe

Mashed potatoes are my guilty pleasure. I've flavored them in the past with garlic, pesto, plaintains, olives and purple sweet potatoes, just to name a few. This time, I used broccoli. It complements the flavor and gives a beautiful color to the purée.

My favorite way to make this dish is to simply mash them using a potato masher, then add milk, cream and lots of butter. It might not be the healthiest approach, but it's certainly the most delicious for creamy mashed potatoes

Mediterranean Vegetables: Healthy Side Dish Recipe Recipe

This Mediterranean vegetable medley is not only a healthy side dish, it's also packed with flavor. I mixed red bell pepper, sunburst squashes, crimini mushrooms, green olives and garlic, along with baby eggplants, which fit perfectly in this particular dish. The skin is tender, not bitter and the seeds are very small. I also melted goat cheese at the end to bind all the flavors together. We bought way too many fresh loaves of French bread from the bakery aisle at Safeway, so I took one of the loaves and cut it into small croutons and used them to soak up the juices from the vegetables.

For a non-vegetarian version, I would substitute grilled chunks of chicken for the croutons and serve it on a bed of rice.

How to Cook Black Rice Recipe

How to Cook Black Rice

03.18.11 by Jackie

Did you know that there are thousands of rice varieties? I found that out recently when I was introduced to black rice. I had never seen it before, but it's apparently very popular in Asia. Served as a side dish or in the form of rice pudding, black rice has a texture comparable to brown rice, but with a more pronounced nutty flavor. The dark color comes from the un-milled rice grain, which leaves a dark husk. In Imperial China, black rice was quite rare, and for this reason consumption was limited to royalty. For this reason, it can also go by the names “forbidden rice” or “Emperor's rice”.

Similar to blueberries and blackberries, black rice is packed with antioxidants. Today, I served black rice as a healthy side along with artichokes, baby carrots, bell peppers and asparagus. It’s a wonderful way to dress up even the simplest of dishes.

Chinese Cabbage Salad Recipe Recipe

Chinese Cabbage Salad Recipe

03.08.11 by Jackie

This salad course is simple and very easy. I shredded a head of Chinese cabbage and mixed it with pickled onions, Vietnamese mint and pickled garlic. The mint enhances the flavor of the cabbage and gives it a fresh taste.

The best part is that this type of gơi (Vietnamese pickled salad) can be done very quickly and it's very low in calories. I'm attending a yoga class today, and this salad will keep me in a Zen state of mind long after the class is over.

Plantain Stuffing Recipe

02.10.11 by Jackie

We had a little bread left-over from the Superbowl party, and instead of wasting it, I turned the stale bread into a delicious side dish. I added plantains, water chestnuts and green beans, then finished the dish with crumbled goat cheese. I paired the plantain stuffing with veal scallopini.
