Chao Vit Recipe (Vietnamese Duck Rice Soup) Recipe

The weather in the Bay Area wasn't all that great over the weekend. It's been rainy and very windy. Making rice soup seemed the appropriate recipe for this type of climate. If you’ve never had it, rice soup is a one-dish meal that is both filling and satisfying. You can add many different ingredients to your basic rice soup, but I made this particular version with my favorite meat: duck. It's called cháo vịt in Vietnamese. I find duck meat to be a lot more flavorful than regular chicken.

Traditionally, it would be served with gơi vịt (Vietnamese duck salad using the remaining meat from the duck stock) and chopped bánh giò cháo quảy, which are Vietnamese savory beignets. I skipped the fried food to keep the meal healthy; I even took the time to strain and remove the extra fat floating at the top of the duck stock!

Coriander Lime Chicken Recipe

Roasting chicken is one of the best ways to showcase the poultry and enhance its flavor. It doesn't require too much skill; really, it’s just about a willingness to get your hands dirty. To ensure a tender and moist result, you’ll need to massage the marinade under and all over the skin of the meat.

The flavorings for the marinade are up to you. All that matters is the inclusion of the tenderizing ingredients to ensure the meat is succulent. Over the years, I've come up with a great combination for a successful roasted chicken, which consists of softened butter or/and olive oil, baking powder, green papaya paste and an acidic ingredient such as lemon, lime (or any citrus) or vinegar. For the remaining ingredients, I chose, garlic, freshly grated ginger, mint, coriander and honey. I also prepared a lime coconut sauce to pair with the chicken. And it was delicious!

Beef Stir fry with Bamboo Shoots (Bo Xao Mang Recipe) Recipe

I bought three large bags of fresh bamboo shoots this weekend, which I used to prepare an enormous pot of bún măng gà (bamboo chicken noodle soup).

Today I took the leftover bamboo we hadn't cooked, but instead of chicken, I paired the bamboo shoots with tender beef steak (bò xào măng). I stir-fried the two with oyster sauce and fresh ginger. To add a little color to the dark dish, I mixed in a few vegetables such as asparagus spears, carrots and Portobello mushrooms. You could make the exact same dish with tofu and vegetarian stir fry sauce if you need to feed a vegetarian crowd, (which is always my case!).

Bún thịt nướng is my kind of comfort food. It's a simple Asian meal that consists of room-temperature rice vermicelli noodles and đô chua (pickled veggies) topped with grilled meat. I marinated two rib-eye steaks with soy sauce, oyster sauce, ginger garlic paste, palm sugar, green onions and sesame seeds.

The ingredients that accompany the rice noodles can vary. I made this version with my favorites: sautéed crab (cua), shrimp (bún tôm nướng) and grilled beef (bún bò nướng). Of course, you could adapt this meal with fried fish (bún cá chiên), chicken (), eggrolls (bún chả giò thịt nướng) or even lemongrass tofu (for a vegetarian version). What I like most is that it's light and healthy without being too terribly difficult to make (I prepped everything separately the day before). And it doesn't hurt that it looks so appetizing!

Beef Sirloin Tri-Tip Roast Recipe Recipe

If you're having trouble cooking red meat to perfect doneness, this recipe is for you because I believe it's fool-proof. I used a bottom sirloin tri-tip roast and marinated it overnight. To ensure the meat is properly seasoned, I placed a spicy marinade (I used homemade chili garlic sauce from last summer, onion purée, maple syrup and cinnamon) in a bag and vacuum-sealed it. The following day, I seared the meat to create an outer crust and the juice remained inside for optimum tenderness. The meat roasted in the oven until the probe thermometer indicated the right internal temperature.

It was quite a large piece of meat; if wrapped properly, you can carve the meat and make the best roast beef sandwich the next day!
