Pho Bo Recipe (Vietnamese Beef Noodle Soup) Recipe

This weekend, we had a quiet dinner with only my family and I decided to make my dad the Vietnamese dish I think I make the best. There are several variations of Vietnamese beef noodle soup; I wanted to make Papa’s favorite, which is the one with beef tendon, called phở bò tái gân.

We watched la Météo (weather forecast) yesterday on TV and it seems it's going to be raining all week!.The clear broth is absolutely delicious and it's perfect if you feel under the weather, which seems be happening to us given the rain!

Butternut Squash Pocket Sandwich Recipe Recipe

My husband's youngest sister, who just started third grade, recently told me she didn't like "Wednesday Pizza" at school and asked me to give her a boxed lunch instead. I had leftover roasted butternut squash, so in the morning, I quickly improvised a flavorful hot pocket sandwich with 2 of my little munchkin's other favorite ingredients: salami and brie cheese. 

I assembled the pocket in a sandwich grill we have. I love this sandwich maker because it browns the bread and seals the sandwich perfectly. After they were done cooking, I wrapped the sandwiches in wax paper and packed them in her Disney Princess school lunch bag. The sandwiches cooled down to room temperature by lunch time, but they were still crunchy and delicious. If you were to make these as a box lunch for work, you could put them in the toaster to re-heat before eating. No microwave though!

Smoked Duck and Fig Tartine Recipe Recipe

“Tartine” is just a fancy word for an open-faced sandwich, using a single slice of bread with several ingredients on top. Growing up, my favorite was a tartine au Nutella, which as the name implies is a slice of bread slathered with the famous hazelnut chocolate spread.

Tartines can of course be savory, and today’s recipe combines, some of my favorite and most decadent ingredients. Fresh figs and red onions from our garden, sinful brie cheese, smoked duck, homemade mayonnaise and pistachios are all irresistible in their own right, and when layered together over a toasted naan, turn any meal into an unforgettable memory. This tartine hits every note; it's sweet, smoky and extraordinarily succulent.

This may be too expensive to be worth serving at a large party. So if you plan to make these appetizers for a group, you might want to substitute another kind of meat in place of the smoked duck.

Plum Chicken (Roasted Chicken Recipe) Recipe

 

This year, we've been fortunate that the gophers and squirrels haven't made off with our fruits and veggies. All our trees have produced prolific crops of fruit, but the plum trees really stand out. We were able to gather large baskets of Santa Rosa plums, Red Raven plums and pluots.

I made a coffee cake with some of the plums and used the rest in this roast chicken dish. The acidity of the plums is an effective tenderizer for the meat, and the sweetness provides contrast. In the past I've used other fruits such as Asian pears and the plums worked wonderfully as well. I also added whole peeled plums at the end of the cooking as a garnish and as a reminder of the flavors that permeate the chicken and as the garnish.

I butterflied a whole chicken and placed it in a roasting pan on a bed of celery stalks so the chicken didn't burn and remains moist. I basted the meat several times; this extra step really makes a difference in ensuring that the final product is moist and delicious. Yum!

Goat Biryani Recipe

One of our dear old family friends begged me to teach her how to make biryani. This week, she came over and I shared our treasured family recipe. I've learned several variations of biryani over the years, but this goat meat version from Pali Apa's (Lulu's aunt) is my favorite. As a bonus, it's probably the easiest to start with when learning how to make biryani. The key to the dish is the freshness of the meat, but it's also important that the rice is flavorful and fluffy and each grain separates easily. 

This might be surprising, but biryani is probably one of the most praised and popular Indian dishes in Vietnam. There is a small Indian expat community in Saigon, and they have been selling this dish as street food for many years. Love for this dish outside of the subcontinent is not just limited to Vietnam. Many times when we have company, I've been asked how to make this traditional Hyderabadi (the city where my husband's family is from) delicacy. So if you've been searching for a good biryani recipe, give this a try, and if you've never had it before, you're in for a treat.
