Date Chicken with Olives Recipe

Date Chicken with Olives

11.21.12 by Jackie

It may be almost sacrilegious to say at this time of the year, but a turkey is not right for everyone. While the big bird (sorry Sesame Street fans) parked on your dinner table, roasted to perfection looks great, if you're having an intimate gathering it can just be too much.

A beautifully roasted chicken is a completely reasonable option, and I've shared one today that uses a sumptuous combination of Medjool dates, date syrup, date molasses and green olives. If you follow the instructions carefully, your chicken will turn out moist and succulent, and more important, won't have you pining for what Benjamin Franklin suggested as our national bird. You can thank my citizenship test prep for that reference!

Meat and Potato Napoleon Recipe Recipe

Meat and Potato Napoleon Recipe

11.15.12 by Jackie

Here's a new take on a meat and potato dish. I pan-fried patties and potato slices, then stacked them into a charming presentation to create a napoléon. I flavored the savory napoléons with goat cheese pesto and placed them on a bed of garlic and basil tomato sauce. I think the tomato sauce helps cut the heaviness of the dish.

I've started receiving photos and messages from those of you who pre-ordered my book "Haute Potato" and I'm so happy with the amazing responses I've received so far! If you're planning on cooking potato dishes for the holidays, here are some recipes from my new cookbook to consider: Cream of Rosemary Roasted Beet and Potato Soup; Pommes Château with Fried Calamari, Basil, and Tomato Cherry Relish; Timbale with Roquefort; Veal Hachis Parmentier; Pommes de Terre Rôties au Four and maybe try my family's favorite potato dessert: Lavender Peruvian Purple Potato White Chocolate Torte.

Bun Cari Ga Recipe (Vietnamese Chicken Curry) Recipe

Chicken curry is the kind of meal I love when the weather is getting chilly. The subtle heat from the wide range of spices such as cloves, cardamom, green Serrano chiles, curry leaves and nuoc mam is very pleasant, and the gravy is so satisfying when paired with bún (Vietnamese rice vermicelli noodles). The noodles soak up all the delicious flavors from the gravy.

I also love the fact that the dish uses chicken drumsticks because they're not too big, not too dry and they cook relatively fast. That’s a lot of love in one dish!

Vietnamese Bi Recipe Recipe

Vietnamese Bi Recipe

10.25.12 by Jackie

Going through the website, I realized I've posted several vegetarian bì recipes but never showed how to make it with meat. Today, I made it with veal. A more authentic version would use pork meat, fat and skin. In any case, the meat is cooked, then shredded and tossed in a finely-ground dry-toasted rice powder mixture. This version is healthier than the original and every bit as tasty.

It's eaten at room temperature. You can serve it with bún (cold rice vermicelli noodles), steamed cơm tấm (Vietnamese broken rice) or in bánh mì (Vietnamese-style baguette sandwiches). I usually accompany the meat salad with đô chua (pickled carrots and daikon), Vietnamese herbs, fresh sliced chiles, lime wedges, shredded lettuce or cabbage, cucumber and nước mắm dipping sauce on the side. It's a fairly easy treat, so give this recipe a try!

Lamb Sirloin Steak Recipe Recipe

Lamb Sirloin Steak Recipe

10.23.12 by Jackie

One of Papa's favorite meats is lamb. This morning, my husband Lulu and I left early and went to the open air "Les Sablons" market in Neuilly-sur-Seine, in a suburb of Paris. It's a small market but it holds a lot of delicious treasures. I bought two beautiful lamb sirloin steaks and we headed home right away, so I could prepare lunch for my parents.

The cut of meat is so fresh, no marinating time is necessary. The main preparation consists of searing all sides then finishing the cooking in the oven. I got a little distracted and waited a bit too long to take a photo right after slicing the meat. Ordinarily, the color of the meat should look a touch pinker!
