Meatball Appetizers with Sweet Potatoes Recipe

Since my husband Lulu was out of town last weekend, I had a few girlfriends over to celebrate the Lunar New Year (a week late!). Next week, we're all going to a Vietnamese charity concert and everyone was talking about how they'd fit into their áo dài, the traditional Vietnamese outfit. I've been back to the gym regularly to do squats and get a solid workout and I just made sure the food would please my weight-conscious crowd.

The menu I served wasn't fussy at all and I tried to satisfy everyone's diet: we started with easy, delicious, look-and-feel-your-best meatballs. I also made cháo đồ biển (seafood rice soup with seabass, shrimp, squid and scallops), along with a kale salad. 

What was in the meatballs, you ask? I created a ground mixture of veal, turkey, flax seeds and quinoa and served with spicy sweet potatoes.

Apricot Roasted Rack of Lamb

One of my favorite dishes, and one that was a staple in my home as a child, was le carré d'agneau persillé, or persillade-crusted rack of lamb. Today, I decided to make a slightly different version that incorporated exotic spices, sweet notes in the form of dried fruits such as dried apricots and almond, parsley and mint in the coating. 

To ensure that the meat was juicy and very tender, I marinated the lamb in an apricot, ginger, Baharat spices and buttermilk mixture. You'll have to let the lamb marinate overnight. It will take some patience until you're able to enjoy it but your efforts will be rewarded. Lastly, once the lamb was cooked, I covered it with the almond, parsley and mint coat for extra fragrance.

Chicken Noodle Soup Recipe

My friend Hadas is pregnant with her second child and is about to give birth in a few days. Unfortunately, she became sick because of the cold weather. Since some medications can be dangerous during pregnancy, I offered to prepare chicken noodle soup with healing spices used in traditional Chinese medicine, such as turmeric, ginger, onion and red chiles.

My way of making the broth flavorful is to first sauté small pieces of chicken with garlic and red chiles, then deglaze the bits fromt he bottom of the pot with liquid to capture as much flavor as possible. I also added common vegetables (celery and carrots) to complete the soup. Hadas confirmed the soup helped soothe her sore throat.

Beef Prime Brisket Recipe

My daughter Aria and I are huge fans of fork-tender beef brisket. My secret tenderizer is a combination of baking powder, dried spices and coarsely-ground black pepper for the dry rub. I kept the flavorings pretty simple, using garlic, onion, sugar, dry mustard, dried oregano and bay leaf.

For a nice contrast of texture, I served the slices of brisket on a bed of red cabbage slaw.

Wine-Braised Chuck Roast with Pasta Recipe

Baby Aria's choice of meat, by far, is beef. And the more tender it is, the more she likes it. I really enjoy making one-dish meals for her. Today, I seared boneless beef chuck steaks, then braised them in wine (the alcohol cooks off during the braising process). Once tender, I boiled campanelle pasta and transferred it to the beef pot. The flavorful gravy sneaked into the cavities of the odd-shaped trumpet-like pasta, which made it more fun for Aria to eat.

I flavored the dish wth fresh thyme, clove, parsley, tomato paste. bay leaf, turnips, onions and garlic. The key ingredient, though, is drinking-quality red wine. C'est tout ("that's it!")!
