Asparagus Chicken Stir Fry Recipe (Black Bean Sauce Chicken) Recipe

I receive many questions and recipe suggestions from readers. It might take a while for me to respond but I want you to know that I read every single one of them and they always fill me with joy. So here's Bill's (a regular reader) recipe for asparagus chicken. I didn’t make many changes; I just added a few more bold and spicy flavors to counteract the blandness of chicken. Specifically, I used black bean garlic sauce and red chiles, in keeping with the Asian theme of the dish.

The key to making sure this dish turns out well is not to overcook the asparagus. I chose to use baby asparagus in this dish but regardless, it should be bright green and still have some crunch . The texture, if cooked properly, is wonderful, and baby asparagus is visually appealing to boot.

For a little background, here's what Bill wrote about the dish:

"I got this recipe a very long time ago while taking a cooking class at “Isle of Skye Kitchen” in Saratoga [California], a combo antique store and vendor of exotic spices ... long gone. It has been a family favorite for years. Here it is with some personal experience updates."

Thanks Bill!

Galette Complete (Savory Crepe Recipe) Recipe

Galettes are the savory version of a crêpe. Une galette complète, also known as crêpe jambon-œuf-fromage is a version filled with ham, eggs and cheese. I decided to have a little fun and made my version with smoked beef sausage, emmental cheese and sunny side up quail eggs.

We make crêpes at least once a month. It's my way of having a lazy day. The girls make the crepe batter themselves, following the instructions to a "t". Everyone gets involved with the measuring of the ingredients and the mixing, even the little ones. If you have kids, this meal is the perfect way to get them interesting in cooking, and everyone can reap the benefits.

Turkey and Cheese Sandwich Recipe Recipe

Since I arrived in America 5 years ago, I've been searching for the best deli-sliced turkey and I think I've found my favorite one of all. My little munchkin is home from school until next week as she will attend summer school. She only eats turkey and cheese sandwiches, so that's what we had today for lunch, with a pack of potato chips.

I think I've spoiled her a little too much, as she prefers hot turkey sandwiches so the cheese is melted. For today’s turkey sandwich, I made a Mornay sauce, which is a white sauce made of flour, butter, mustard and milk. I also add a pinch of nutmeg to enhance the flavor. I smothered the bread with the sauce, stacked many layers of greens adn the turkey slices and voilà, lunch was ready.

For the vegetarians in the family, I made the exact same version using tofurkey slices. It's the perfect meal when you're in a hurry!

Note: The sandwiches pictured on the left are made with tofurkey and the ones on the right with real turkey slices.

Vietnamese Lemongrass and Chili Chicken Recipe (Ga Xao Xa Ot) Recipe

Lemongrass chicken (cơm gà xào xả ớt) is a very delicious and easy Vietnamese meat dish to prepare. To start with, the chicken pieces are marinated overnight to guarantee optimum tenderness. The next day, I prepare a mix of spices made of finely chopped lemongrass, sugar, chili and salt. The dish is completed by combining and sautéing the ingredients in a fry pan.

I love the fragrance and taste of lemongrass. It has hints of sweet lemon and a touch of ginger. It really adds a distinctive flavor, but this dish can easily be ruined if the lemongrass isn't ground properly into a fine, moist powder. It’s important to take time to thinly slice the stalks of lemongrass before grinding them.

In case you’re interested, growing lemongrass is very easy. All you need to do is trim it often. My husband Lulu planted 4 "bushes" of lemongrass a few years ago. I gathered 4 stalks from the garden and made both lemongrass tofu (tàu hủ xả ớt) and lemongrass chicken for dinner tonight. The plants are quite prolific, and if you use a lot of lemongrass in your cooking, it’s worth planting some in your garden.

Spicy Peanut Mascarpone Chicken Curry Recipe Recipe

To make mascarpone chicken, I marinated chicken breast cubes that I tenderized overnight using buttermilk. For the thick gravy, I made a mixture of mascarpone and coarsely ground peanuts and turmeric.

Since the dish is a little heavy, I suggest serving it with leafy greens and steamed rice. It’s not the healthiest way to eat chicken, but it is quite delicious. Also, I’ve found that even finicky kids love it. That should be enough to get over any guilt you feel. It works for me!
