Cauliflower Tomato Salad Recipe

We recently had guests for dinner and I made a cauliflower and tomato salad. I explained to our guests how this "salade de chou fleur et tomates" was made and the following day our guests emailed me back thanking me for this new recipe.

Inevitably, whenever we have guests over, my mother-in-law exclaims "Look what an amazing dish Jackie made today! Did you know Jackie has a food website? She posts daily recipes on PhamFatale.com and she's a soon-to-be published author." And whenever she goes anywhere, she talks about my cooking and about PhamFatale.com. And now that I have my first cookbook coming out soon ("Haute Potato" due on December 18th), she hands out cards to promote my book. She's my own one-woman PR firm!

Back to the dish...I boiled cauliflower very briefly then flavored it with champagne vinegar and a bit of honey. I mixed the cauliflower with beautiful heirloom tomatoes from our garden and shredded lettuce. For a nice contrast in texture, I added lightly toasted almond slices. If you want more crunch you could also top the salad with croutons.

Roasted Carrots

If carrots only appear on your dinner table chopped up in salads, this recipe is for you. Roasting the carrots brings out their natural sweetness and the other ingredients in this dish enhance the flavor. The number of ingredients is minimal: good quality olive oil, kosher salt, green, pink and black peppercorn medley, lemon thyme from the garden and a drizzle of wildflower honey are all you'll need. This fancy yet simple presentation is a no-brainer for dinner parties.

A few minutes in the oven and the result is absolutely stunning. The carrots  turn slightly brown and they're candied to perfection!

Tomato Bruschetta Recipe

Though my intention in making these mini bruschetta was to provide a healthy and appealing snack for kids, they aren't the only ones who'll enjoy these tasty treats! My husband Lulu, who at times acts like a kid himself, greatly appreciated them too. But really, who could resist garlic-rubbed toasted bread topped with a mixture of chopped ripe tomatoes, fresh garlic, fresh basil, black pepper and extra-virgin olive oil? All you really need are fresh, quality ingredients and little helpers to assemble them!

Crimini Mushroom Tart with Roasted Cherry Tomatoes Recipe

Earlier this week, Kris from Full Circle offered to let our family try out their farm-to-table delivery service. This evening right after yoga class, I received our first harvest order and I couldn't wait to cook with these farm-fresh ingredients. Mediterranean Pinwheel Sandwich Recipe Recipe

These colorful pinwheel sandwiches are loaded with Mediterranean flavors. Fresh and roasted vegetables are brought together with hummus and pleasingly tart capers. The cabbage and carrots were also briefly pickled in lemon juice and a little sugar to add a little brightness without sacrificing their crunch.

I made these pinwheel sandwiches a while back with the gals from California Lavash. I had a blast cooking with them and look forward to doing it again soon. Their pizza lavash is out of this world. These sandwiches are perfect for the summer and would look fabulous at any picnic, party or barbecue. Enjoy the sunshine!
