Wild Rice and Hearts of Palm Salad Recipe Recipe

After making the hearts of palm crostini, my husband Lulu asked for more. I decided to make a healthier hearts of palm dish this time. I served the veggie in a wild rice salad with refreshing greens such as sugar snap peas, celery and flat-leaf parsley. A little sprinkling of sunflower seeds for crunch and crumbled blue cheese for a richer mouth feel completed the dish.

If cooked improperly, wild rice can be very tough and taste like horse food. Follow the few steps I've outlined, and you'll get soft, delicate rice with a nutty flavor.

Shredded Carrot and Walnut Salad Recipe Recipe

Delicious food doesn't have to be complicated. Today I made carottes rapées, which is a staple in French cuisine and requires almost no complicated preparation. This version isn't completely authentic because of a few enhancements I made. Specifically, once the carrots were "rapées" (shredded), I added freshly shredded Parmesan cheese, a few capers, fresh dill and sesame caramelized walnuts.

There's a saying in French: "Mange des carottes, ça rend aimable!", which translates to "eat carrots, they will make you become more kind". Chinese Cabbage Soup Recipe Recipe

Chinese Cabbage Soup Recipe

While picking fresh vegetables at a local Korean market with Aria sitting in my shopping cart, a very nice lady began chatting with me in front of stacks of neatly arranged young Chinese cabbage heads. She said they make excellent kimchi, as well as a delicious soup for little ones. I love sharing new foods with my daughter, so I definitely appreciated the advice.

I kept the soup fairly simple, adding potatoes as the primary thickening agent. They give the soup a richer mouth-feel without making it heavy and overbearing. It's a very pleasant way to start a meal, whether you're young, old or in-between.

Boiled Brussels Sprouts with Grapefruit Salad Dressing Recipe

Cooking Brussel sprouts can be a chore, especially if you roast them. So today since I was running out of time, I simply boiled and mixed them warm with a grapefruit salad dressing. For garnish I added freshly-cut grapefruit segments and sunflower seeds.

Boiled vegetables can be delicious if seasoned and paired with a flavorful sauce. Just look for a few fresh, complementary ingredients before deciding on a particular flavor route.

Pattypan Squash Salad Recipe Recipe

Pattypan Squash Salad Recipe

09.18.12 by Jackie

The vinaigrette for this fresh pattypan squash salad is a blend of chives, parsley, oregano, tarragon, thyme, a bit of mint, garlic, onion and lemon finished with a drizzle of good quality extra-virgin olive oil. You could serve this salad nicely as a side dish; it goes quite well with grilled chicken, for example. Pattypansquash goes by many names. You may recognize it as sunburst squash, cibleme, scallopini squash, custard squash, scallop squash, button squash or summer squash. No matter the name, pattypan squash makes a pleasantly sweet and refreshing addition to just about any salad or grilled vegetable medley.
