Mushroom Tofu Stir Fry Recipe

My husband Lulu's niece and nephew spent the afternoon with us. It was so nice having so many children in the house. Of course, our daughter Aria was the center of attention and she loved it! While they were playing with the baby, I prepared dinner. I cooked some brown rice (Lulu's request since the beginning of the new year) and made mushroom tofu stir fry.

The stir fry is composed of combined shiitake mushrooms, oyster mushrooms and enoki mushrooms, Japanese eggplant, sugar snap peas and tofu, of course!

Wood Ear Mushroom and Tofu Stir Fry Recipe Recipe

Here's a simple and easy tofu stir fry recipe. Pan-fried tofu is cooked with celery and fresh wood ear mushrooms.  Quick and delicious. That's it!

The Asian New Year is Sunday, and as you may have noticed, I've been cooking a lot of tofu dishes over the past few days. Next I'll share with you some of my favorite New Year's desserts. Stay tuned!

Tet Celebrations: Canh Hoanh Thanh (Wonton Soup Recipe) Recipe

This week marks the beginning of the Tết celebrations. A tradition of Tết is that you eat vegetarian (ăn chay) on the last day of the previous year and first day of Asian New Year, so I decided this week I will be sharing several vegetarian Vietnamese dishes with you until the celebration commences this weekend.

I haven't made wonton soup (canh hoành thánh in Vietnamese) in a while, which is a shame because it's not all that complicated. The filling consists of carrots, tofu, chestnuts, green onions, wood ear mushrooms and shiitake mushrooms. I also made a simple broth to let the flavorful vegetarian dumplings be the shining stars.

Vegetarian Beef Recipe

It's hard to believe it's almost the end of January already! It feels as though the year just got started. With the Asian New Year (Tết in Vietnamese) starting in a few days, I concocted yet another vegetarian recipe. This time around, I stir-fried vegan-friendly faux-beef with fermented black beans and chili garlic sauce. It's a great source of protein while the texture is very similar to beef itself. 

To balance the meal, I also added crookneck squash, which provided a soft contrast to the dish. Enjoy!

Veggie Bean Burger with Cannellini Beans Recipe

Being a vegetarian doesn't have to equate with eating bland food. Since marrying Lulu, I've learned many dishes that are just as nutritious (and probably healthier) as meat dishes, without sacrificing flavor. This dish is a shining example. I used a few pantry ingredients such as dried cannellini beans, seasoned croutons and a lot of herbs and prepared white bean burgers.

Pair them with a yogurt sauce and you'll have a delicious meal.
