White Asparagus and Tofu Recipe

This is the vegetarian meal I usually make when there is no fresh produce left in my refrigerator. I had lots of  errands today and grocery shopping was part of my to-do list, but I never had time to reach that one task before my husband Lulu and daughter Aria got back home for lunch. So I went on a scavenger hunt in the pantry to make a quick and easy recipe for lunch to please my husband's vegetarian diet.  

I prepared white asparagus tofu because, well, this is what was available in the pantry. I found a can of white asparagus spears, honey, vegetarian hoisin sauce and tofu. To enhance the flavor of the dish, I also added garlic, yellow onion wedges, black bean sauce and chili garlic sauce. 

I always stock my pantry with key ingredients in case of an emergency. My go-to tofu is the one that requires no refrigeration until the package is opened (shelf-table). I usually select the firm kind. Simply make sure the package mentions that there are no preservatives, that it is gluten-free (that's a good sign for its quality) and that it’s made with non-GMO soybeans.

My friend Carole and her husband have been so keen on making juices, she often gives me suggestions on how to create new drinks with my powerful blender. Today's healthy juice is a blend of pure, freshly pressed apple juice, fresh cucumbers, baby kale, spinach leaves, lime juice, chia seeds and a lot of ice cubes. 

The chia seeds add a beautiful consistency to the juice, which can otherwise seem a little flat. They are loaded with health benefits, so if you want to start the day on a wonderful note, take a few minutes to prepare this "superfood" drink and remember to consider adding more greens to your daily life.

Fried Egpplant with Balsamic Coffee Reduction Recipe

This recipe is heavily inspired by an antipasto we had during our family trip to Italy last month. I didn't think "melanzane all'aceto balsamico", or eggplants with balsamic vinegar, would give me much of a thrill. But I was blown away by the flavor of this simple preparation with minimal ingredients. I decided that when I got back home, I’d prepare a similar starter dish.

First I pan-fried tender eggplant slices, then coated them in a balsamic reduction flavored with garlic, fresh oregano and dark, bold coffee. To provide a great contrast of color and texture, I topped the very nice and tasty eggplants with crumbled goat cheese, sweet basil and chocolate-covered coffee beans as a reminder of the flavor of the reduction.

It's the first time since the launch of PhamFatale.com that I've been away for so long. I've been swamped with work and my personal life is so chaotic these days, I didn't have a minute last week to be in front of the computer. I want to announce that I just completed my first, professionally filmed episode of a new cooking series. We worked day and night and finally wrapped the 20-ish-minute episode after taping on the last day for more than 15 consecutive hours, until dawn. It was challenging but it really gave me an insight into what really happens behind the scenes. A lot of mishaps happened on the first days (broken glass, crickets, yellow jackets and wildlife were part of the fun), but overall it was such a positive experience.

Thanks to the amazing filming crew, I had a lot of fun in a very friendly atmosphere. To show my appreciation, I concocted and packed a full meal for each member so I could be forgiven by their spouses after taking them away for such long hours. Thank you so much Polar Production Team for your professionalism, hard work, dedication and most  of all for believing in me. You guys rock!

Blueberry Kiwi Smoothie Recipe

I've tried shedding a few pounds since our return from Florence, Rome and Paris. Almost every year, the girls join me during the summer in my workout and diet routine. Mimi, Lulu's 14-year-old little sister, surprised me this morning and prepared the fruitiest, packed-with-energy smoothie. She didn't use any additional sweeteners, except for the natural sweetness from bananas, blueberries and golden kiwis

Mimi used our powerful Vitamix blender. For a smoother flow, she also added almond milk. When I first met her, Mimi used to have awful allergies with almonds, but since her teenage years, she has overcome this specific allergy. Unfortunately, we've discovered new ones, especially during our trip to Florence. She's allergic to truffle mushrooms now; go figure!

Quinoa Salad Stuffed Artichoke Recipe Recipe

Our family's just back from our wonderful trip to Europe. Our last stop was in Paris and I have to stay I might have overindulged on delicious pastries from my favorite boulangerie, Moulin de la Vierge.  Their croissants are to die for. As a result, now that I'm home I'm preparing light, healthy meals.

For this recipe, I stuffed tomato and corn quinoa salad into jumbo artichokes and served them during our quiet July 4th weekend.
