Mache Pesto Risotto Recipe (+Giveaway) Recipe

Remember when I said I always have pesto prepared in advance and stored in the freezer? This recipe doesn't require a lot of effort if you already have pesto on hand. Today I made risotto with my favorite pesto recipe, made with mâche leaves. In case you’re not familiar, mâche, or lamb's ear lettuce, is a small-leaved, brightly-colored green. It has a mild but very distinct flavor.

First, I cooked Carnaroli rice with vegetable stock until tender. Once the rice absorbed all the liquid, I added the mache pesto, caramelized onions and Parmesan shavings. This simple recipe makes a quick and easy comfort food fix in less than 40 minutes.

Today's giveaway is an assortment of all four varieties of HK Anderson pretzels. They are crisper than any brand of pretzels I've ever had. HK Anderson have been making these crunchy treats since 1888. I really like the thin-shelled ones filled with peanut butter. Being French, I didn't grow up with peanut butter and this is one of the few ways I enjoy them. For a chance to win, just enter on the 25 Days of Giveaways page.

Mache Pesto Pasta Recipe Recipe

Mache Pesto Pasta Recipe

12.13.11 by Jackie

Fresh pesto is delicious, easy, and bursting with flavor. It’s also incredibly versatile in that you can use many different types of greens to modify the flavor. Today I was so happy my experiment with turning French mâche into delicious Pesto proved to be delightful and nutritious.

To make the pesto, I paired the mâche lettuce (pronounced [mosh]) with champagne pear vinegar because both are so delicate and flavorful. I kept the dish very simple; I tossed pasta with garlic and a little cream. Once the pasta was well coated, I added the mâche pesto and finished the dish with lemon zest and colorful peppercorns.

The flavor combination was inspired by store-bought lemon pepper-flavored pappardelle pasta. I repeated the same flavors using lemons, green, pink and black peppercorns and a touch of champagne pear vinegar (doesn't that sound luxurious?) that I recently received from our friend Jacilyn from Bellindora. This company is four-generation family owned and is located in the heart of California's San Joaquin wine country. I've tried both their premium vinegars (cherry balsamic and champagne vinegar) as well as their fruity extra-virgin olive oil and they make wonderful pestos and salad dressings. If you want to win this trio of bottles, enter today's Bellindora giveaway!

Edamame Pesto Pasta Recipe Recipe

Edamame Pesto Pasta Recipe

05.02.11 by Jackie

Edamame pesto is a new pasta sauce I came up with this weekend. I made this pesto with edamame beans, roasted garlic, walnuts, walnut oil and dill. I added diced fire-roasted tomatoes to soften the sauce and melted brie cheese as the finishing touch. Lulu absolutely loved it and used some of the leftover pesto to make sandwiches this weekend.

I love experimenting with new ingredients, and this week I found not one, but two ways to use edamame beans. We usually just serve them plain as a snack, but now I know that they make incredible hummus and pesto!

Red Pesto Pasta Salad Recipe Recipe

Red Pesto Pasta Salad Recipe

07.31.10 by Jackie

Pasta salad is an easy dish for quick on-the-go meals. For this version, I used radiatore pasta because its unique shape that traps the sauce into the corkscrew-style curls. The sauce is a colorful bright red pesto made of sun-dried tomatoes, roasted red bell pepper, eggplant and pine nuts.

This is a perfect main course or side dish for picnics or summer parties. This time, I let the pesto pasta salad chill in the refrigerator for our family’s road trip to Oregon. We're leaving in the wee hours of the morning today and will arrive in Ashland for Oregon's annual Shakespeare Festival. We're looking forward to the visit! I will try to post about it and share our experience with you.

Sun Dried Tomato Pesto Pasta with Turkey Sausage Recipe

Pasta and sausage is a combination that is probably not new to most people. The challenge is that I need to make the dish accommodate both the vegetarians and meat eaters in my house.

To this end, I separately grilled tofurkey (mock turkey made of tofu) and apple turkey sausages and mixed them into two batches of homemade sun-dried tomato pesto sauce.
