Pan-Seared Salmon with Lemon
Fish, in general, is an excellent light meal idea. Salmon in particular, if prepared properly, can be very moist and flavorful. First, make sure to ask your fishmonger to clean the fish and its skin. The next important issue is the marinade. Finally, don't overcook the filet and a delicious dinner will be in your future.
For this recipe I used lemons as a tenderizer and flavoring. I pan-fried and created a crust around the salmon steak and finish baking it in the oven on a bed of lemon slices. I served it with pineapple salsa (mango salsa would work too).

Kumquat Drink Recipe (Orangina)
Our kumquat trees have been so prolific this season that I thought it was time for me to experiment and re-create my favorite soda, Orangina, from scratch. In France, Orangina is a very popular sparkling beverage made from tangerine and oranges. I've tried making this with oranges in the past, but the citrus flavors weren't strong enough to resemble the famous drink. Since kumquats have a unique, strong, lemony flavor, I gave the fruit a try.
I've made homemade soda drink in the past, using dry active yeast (I'll post the recipe this summer) but unfortunately because of the cold weather (I assume), after 3-4 days, the fizz didn't happen. So I re-made it using carbonated water. Because the process is immediate, you'll be able to enjoy a delicious soft drink right away. The soda is very flavorful and has a striking orange color -not the radioactive hue of artificial orange drinks-. If you can find kumquats at your local market, give this a try. Your taste buds will thank you!

Strawberry Muffins
Marbled Muffins made with homemade strawberry jelly are our family favorite. The muffin batter is mildly sweet with a touch of acidity from the strawberry jelly. I used strawberry extract and lemon zest in the batter and repeated both flavors in the jelly.
The muffins have a subtle elegance that makes a perfect treat for tea parties or for children's birthdays or play dates. I've made them for both, and they're always a hit. The design is my own attempt at modern art; I put a dollop of the jelly on top of the batter and then use a toothpick to draw in random designs. It's not Jackson Pollock, but hey, I'm sure it tastes better than his paintings!

Brussels Sprout Salad with Marinated Feta Cheese
We're in a funny period. It's not cold enough to make soup, but we're starting to get fall and wintry ingredients such as figs and Brussels sprouts despite the hot weather. I bought some Brussels sprouts from the local market and decided to make a salad with them. I think the brininess of the feta complements the flavor of the Brussels sprouts really well. I marinated some feta cheese with lemon juice, lemon zest and pink and green peppercorns, and added it to the steamed and grilled Brussels sprouts. The result is something that in no way resembles the boiled, lifeless Brussels sprouts that are reviled by kids and adults alike. In fact, the girls absolutely love Brussels sprouts, and they completely inhaled the salad.
