Baked Fish with Peach Relish

Here's probably the easiest baked fish recipe. Swai fillet (catfish) is seasoned with Bellindora seasoning, smoked paprika and cayenne pepper. Then, it's pan-seared with a combination of olive oil and butter and transferred to the oven until fully cooked. I use the combination of fats so that the butter doesn't burn. Right before the end of the cooking time, peach relish is spread over the fish to add a sweet and acidic flavor to the fish.

The peach relish is made with canned peaches, a lot of Italian parsley, pickled spring onions, Bellindora balsamic peach vinegar and red mini sweet peppers. It adds a brightness and freshness to the dish. I can't wait for peach season to make the dish again with fresh fruit!

Radish Pesto Recipe

Here's a simple pesto made with radish greens. Radish greens have a strong, peppery flavor, which adds an interesting dimension to traditional pesto. If it's too strong for you, you could mix it with more traditional greens, such as basil or spinach.

We grow our own radishes, and it's really wonderful to be able to use all the fruits of our labor. Radishes are one of the easiest and fastest maturing crops that can be planted in the garden. The "French Breakfast" variety used in this recipe only require about 22 days to mature. Here in California, that works out to at least four or five harvests per season. So expect to see more radish recipes as long as it's sunny out!

The longer you leave the radishes in the ground, the spicier they get and the hairier the leaves will become. The leaves are still edible, but, the texture may become unpleasant, which is why I decided to put these greens to use in a pesto. In France, there are several soups made with radish greens. Cooking the greens, in general, will mellow them out a bit.

Chocolate French Toast Recipe (Pain Perdu) + Giveaway Recipe

It may be a bit cliché, but I'm a chocolate addict. I’m always trying to find new ways to use chocolate. Growing up, there was Nutella on the table every day, and I thought it would be fun to come up with a decadent, chocolate-flavored breakfast treat for the holidays.

Edamame Pesto Pasta Recipe

Edamame pesto is a new pasta sauce I came up with this weekend. I made this pesto with edamame beans, roasted garlic, walnuts, walnut oil and dill. I added diced fire-roasted tomatoes to soften the sauce and melted brie cheese as the finishing touch. Lulu absolutely loved it and used some of the leftover pesto to make sandwiches this weekend.

I love experimenting with new ingredients, and this week I found not one, but two ways to use edamame beans. We usually just serve them plain as a snack, but now I know that they make incredible hummus and pesto!

Horseradish Cream Sauce for Fish Recipe
