Cranberry Chicken Recipe

I usually use lemon juice as a meat tenderizer; the acidity from the citrus is perfect for softening meat and getting it extra tender. For Thanksgiving, I wanted to try something different, so I tested a new chicken recipe by substituting cranberry juice for the lemon juice. I wanted to make sure the skin was nice and crispy, so I pan-fried the chicken first, then completed cooking in the oven.  

I still don't have a final count on the number of meat eaters attending our Thanksgiving. I know for sure we'll have many vegetarian side dishes and appetizers to please my husband Lulu, Daddy and the girls, but I'm still wondering if I'll roast an entire turkey or two chickens. This recipe will work for either bird, so I’m covered either way. And so are you!

Cranberry Jam Buttercream Cake Recipe Recipe

I can't believe it's already the weekend! And you know what this means: it's that time of the week when I bake sweets. I got the recipe for today’s dessert from the amazing Gesine Bullock-Prado's book, “Bake It Like You Mean It”. I prepared two génoise cakes, and once they came out of the oven, I drizzled them with a bit of rum, then let them cool to room temperature. The next steps were to prepare the frosting of the cake and chocolate decoration. 

To be in tune with the upcoming Thanksgiving season, I made a cranberry jam buttercream frosting, which is ultra easy. I know I'm not a professional baker just by looking at the photo but there were at least three good things I could comment about: the cake definitely looked homemade, I used a pretty serving platter to counteract the aesthetic of the cake, and most important, it tasted divine. Note to self: stick to cupcakes!

Aebelskivers (Pancake Ball Recipe) Recipe

I think this recipe would be a perfect addition to a Thanksgiving brunch. The children in our family love pancakes, and this version fits the season quite well due to the addition of cranberry jam. It doesn’t hurt that the pancakes have a unique look to them as well.

The recipe starts like any pancake recipe. The one challenge is actually fitting the jam into the pancakes, and to make that possible, I cooked them in an aebelskiver pan. Aebelskivers are round pancake balls that taste similar to crossbred doughnuts and popovers. I usually use this pan for a Vietnamese dish called bánh khọt, which is a savory Vietnamese-style rice flour pancake. You've probably seen it in a flat-version (bánh xèo). Today, it made lovely, fluffy pancakes filled with a dollop of sweet/tart cranberry jam. If you prefer, you could fill them with candied yams, though I think there wouldn’t be as much textural contrast. This is definitely a recipe to learn, as it’s easy to adapt to any season or occasion.

Marshmallow Popcorn Treat Yogurt Parfait Recipe (+ Giveaway) Recipe

I love experimenting with just about anything, so I created marshmallow treats with their Vietnamese Cinnamon Sugar-flavored popcorn. I made a yogurt parfait and incorporated the sweet treats as a substitute for granola. This recipe is flavored according to the season; I used mandarin wedges and orange and cranberry sauce. You could adapt it with what you like of course. You don't have to create these cups for breakfast or dessert (or whenever you eat parfaits); just savoring 479° Popcorn by itself is perfectly reasonable.
