Sweet Potato Risotto Recipe Recipe

Sweet Potato Risotto Recipe

01.23.13 by Jackie

With Valentine's Day coming up soon, I thought I'd share with you an easy gourmet potato dish. This recipe didn't make it to my "Haute Potato" cookbook, but it is one of my favorites, nonetheless.

Sweet potatoes are roasted then added to pre-cooked Arborio rice. The finishing touch fot his risotto is a dollop of truffle butter. I recently discovered Thierry Farges' Aux Délices des Bois brand of truffle butter at the Fancy Food Show, and it's amazingly flavorful. You should definitely give this a try!

Avocado and Persimmon Salad Recipe Recipe

This colorful salad was inspired by my daughter Aria's godmother Nathalie. Not only is Nathalie a wonderful godmother to my baby girl, but she's also an amazing cook. While we were in Paris, Nathalie invited us several times for dinner and made a feast every single time for us. We were so spoiled!

One of our favorite dishes that she made for us was an avocado and Hachiya persimmon salad. Persimmons, when ripe, have a vibrant orange color, making them perfect for Halloween. In case you were confused, the Hachiya variety is the soft one, with the pointed end. They are irresistible when extremely ripe, but basically inedible before that point. I always ripen the fruit in a paper bag with apples or bananas (or both).

The creamy avocado slices are the perfect contrast to the brightness of the persimmons. To finish the salad, I added spicy sprouts and slightly toasted pine nuts for texture. I think it's the perfect salad for a Halloween party, and I hope you do too!

A special note to all those affected by Hurricane Sandy: I hope everyone is staying safe. The American Red Cross is taking donations now to help the victims of the hurricane. They are also asking for blood donations, so if you're able to, please participate.

Chocolate Bat Cookies (Halloween Breakfast Recipe) Recipe

Halloween is a few days away and I've been preparing little sweet treats in anticipation of the event. For breakfast, I baked bat-shaped chocolate wafers that I paired with sweetened yogurt and fresh figs from our garden. The result is divine; the crunch from the cookies balances out the smooth texture of the yogurt, and chocolate and figs work beautifully together.

I'm going to be baking a lot more scary-looking pastries until Halloween, including my witch's fingers, funny-looking sunny side up eggs and ghost-shaped pancakes. If you have other suggestions, feel free to send me a message!

Roasted Pumpkin Soup Recipe Recipe

Roasted Pumpkin Soup Recipe

10.24.12 by Jackie

We're finally back home to the Bay Area after our trip to Europe. Surprisingly, the weather in Paris was a lot warmer and more pleasant than California. It's been raining quite a bit here. With Halloween coming, I picked up 3 small pumpkins and made comforting creamy pumpkin soup to ward off the cold.

The preparation is fairly easy: roast the pumpkins, add a little molasses, puréed sunflower seeds and cream and you're good to go. I paired the soup with grilled slices of baguette bread, so my husband Lulu and I could reminisce about the wonderful time we just had in Paris. I'll be posting a lot of photos of our recent trip very soon. Stay tuned!

Pumpkin French Toast (Pain Perdu Recipe) Recipe

It’s that time of the year again! Halloween is over and Thanksgiving is only a few weeks away. The time for fall flavors has definitely arrived. Pumpkin is one of the most versatile ingredients of the season, and today I used it to put a twist on French toast. I prepared a simple custard batter flavored with pumpkin purée and saffron and soaked day-old stale bread. I paired it with a saffron-sweetened heavy whipping cream. The dish is fragrant and flavorful without being overly sweet. It’s definitely a departure from your average pain perdu (literally "stolen bread").

This would be a wonderful treat for Sunday brunch, or for the day after Thanksgiving. I’m making it today for Lulu as a reward for volunteering to take the girls trick-or-treating last night. The girls’ feet started hurting, so he cut the outing short and took them to the supermarket to buy bags of chocolates and candies. That still counts though, right?
