Delicious Drinks to Enjoy This Fall Recipe

Several times a week, I take little Aria to "Toddler Story Time" classes, which she enjoys tremendously. The theme these days is about the fall season. Miss Rose, the teacher, explained that leaves begin to change color and Aria seemed mesmerized by all the changes this season suggests.

When we went home, she made a drawing with trees and leaves. While she was busy, I made a pumpkin smoothie for a tasty seasonal treat. Then I told her we'd start cooking more fall-flavored dishes to satisfy her daddy's seasonal holiday cravings. For now, I'm sharing with you delicious drinks to enjoy this pre-holiday time.

Mushroom Potato Galette Recipe

Sometimes the simplest things make the most delicious dish. For this vegetarian recipe, I only used 3 ingredients plus seasonings and tried to showcase them in one easy dish. Red potatoes from my garden, button mushrooms and ghee (clarified butter). Very thinly sliced potatoes were arranged into a galette and stuffed with mushrooms. That's all. I also flavored the ghee with oregano and seasoned the potatoes with salt and white pepper.

It's amazing how easy it is to grow potatoes: bury the potatoes into the soil 3 weeks before the last "frost" date. For the Bay Area, I usually wait until late March. Remember to water regularly. You'll be able to harvest the first potatoes when the flowers open up. Check back often; the main part of the plants should be pulled once the foliage has died.

Porcini Mushroom Cornbread Recipe Recipe

I love making this foolproof cornbread recipe. The only difference between versions is the flavor combination. The list of adaptations is endless. I never have a specific idea of the meal I'm going to prepare on a daily basis. My first reflex is to inspect my refrigerator, then go through the pantry and finally mix and match flavors that can complement one another. That's the beauty of cooking.

This time, I mixed crushed hazelnuts, dried porcini mushrooms and roasted garlic into the batter. The pungency from the garlic, the richness from the hazelnuts and the extravagance of the mushrooms created the ultimate, most luxurious cornbread I could think of. Don't you agree?

Pumpkin Pasta Sauce Recipe

We spent a pretty low-key weekend, which is just what we needed after being so busy with holiday activities. I had time to do my favorite activity: cooking! I planned on making a fairly healthy meal of bow tie pasta covered in sauce.

I used fresh pumpkin and boiled it until very soft. I love all kinds of squash, including pumpkin, when they're in season. I almost never use the canned version, even for baking, unless I'm really running out of time. 

For better visual appeal, I added finely-cut French green beans and sprinkled the top of the pasta dish with a little grated Dubliner for extra nuttiness.
