Mustard Deviled Quail Eggs with Smoked Salmon (Oeuf Mimosa Recipe) Recipe

Oeuf mimosa ("deviled egg" in English) is a first course (or appetizer) made of hard cooked eggs from which the egg yolks have been removed and mixed with mayonnaise and herbs and then filled back into the egg white.

Deviled eggs are a very common French bistro dish but instead of using large chicken eggs, I used quail eggs. There are simple rules on how to boil quail eggs. The freshness of the eggs is very important. Remove the eggs from the refrigerator 15 minutes prior to cooking to bring them back to room temperature, then cover them with cold salted water and add a hint of vinegar. Egg shells are porous and by salting the water, the eggs will already be seasoned; the vinegar helps the egg whites coagulate in case they break while boiling.

The eggs are usually dressed with anchovies rolled into a ring with a caper or olive on top. Today I wanted to glam them up though, so I served the deviled eggs with smoked salmon and dill. Our guests love the mini appetizers and so will you if you give this recipe a try!

Banana Coconut Creme Brulee

A journalist contacted me this week and asked if she could use my crème brulée photos. Not that I need much prompting, but it got me thinking of crèmes brulées and I thought I could try out some new flavors.

I happened to have baby bananas in the house, along with some leftover shredded coconut from making lima bean curry. The mini bananas come from Guatemala. They are very sweet and flavorful. I caramelized them in sugar and used them as garnish. I flavored the custard with the shredded coconut, rum and banana extract. The result is a very pleasant dessert using ingredients that are available this season. Can't wait for spring to experiment with more flavors!

Croque Madame Sandwich Recipe

My little munchkin loved the croque-monsieur and she asked for the same lunch the next day. I decided to make another version of the same sandwich: the famous croque-madame. The croque-madame is essentially a croque-monsieur topped with a sunny side up egg.  If you ever get confused about which sandwich is which, just remember that the "female" version is just like the "male" version, but with extra flavor .

I added ketchup and flat-leaf parsley to create the face of an angry clown to make the sandwich kid-friendly and more playful. In case you were curious, she loved it!

For those of you who are wondering if the croque-mademoiselle exists, it does! It's supposed to be more delicate like a diet version, with whole wheat bread.

Butterscotch Creme Brulee

Crème brulées, though tasty by themselves, are a perfect palette for other flavors. My husband Lulu loves butterscotch, so I came to the fairly obvious conclusion that I should combine the two of them.

If you're not a big fan of butterscotch, you can substitute any other flavor that you like but you have to balance the sweetness of the dessert.

Lemon Creme Brulee

The creme brulee is a classic French dessert. The base is just your average  custard, but you can add your own twist to it by using different chocolate chips  (milk, dark, white, butterscotch, peanut butter, lemon, mint) or by adding an  extract to the vanilla chips (rose, pandan, peppermint, mocha). It is a true  culinary chameleon.  

What really sets the creme brulee apart though is the crunch when you break  through the burnt sugar crust. I think that's what truly gives it its status and  sophistication. It somehow brings a smile to your face, no matter how old you  are. It reminds me of the scene in Amelie when she breaks through the crust and grins.
