Lobia Dal Spiced Curry Recipe (Black Eyed Peas Curry) Recipe

First of all, I would like to send you my best wishes for the New Year, and i hope this week has started as well for you as it has for me. 

I've been extremely busy preparing for the promotion of my second cookbook, Banh Mi. As I mentioned last week, 2014 seems to be starting with a bang. I'm doing a Golden Globes Luxury Gifting Suite at the beginning of the year and copies of Banh Mi will be included in the celebrity "swag bags."  Celebrities will be photographed on the red carpet at the suite with the Banh Mi book and I will be serving a few dishes from my cookbook. I'm so excited!

For the first Meatless Monday of the new year, I went for a super easy Indian vegan dish called lobia dal. It's an especially simple lentil bean dish if you use frozen black eyed peas. The rest of the ingredients consist of chickpea flour (besan), cumin, chiles, tamarind and curry leaves. I served it with warm roti (Indian flat bread), gur (jaggery, which is palm sugar; it tastes similar to flavorful brown sugar) and garlic chutney to complete the meal.

I realize I haven't posted any Indian dishes for a while. Last weekend, Daddy, my father-in-law, suggested we prepare poha, which is a flattened rice dish. Poha is a great breakfast item and is also delightful as a snack. I've prepared similar dishes such as chudva in the past.

Thick, flattened rice grains are rehydrated and cooked with turmeric and coconut. I kept the recipe fairly simple , flavoring the rice with only mustard seeds, cumin seeds, dried red chiles, curry leaves, cilantro and a generous amount of lime juice. 

You could fancy this up and make it more filling with frozen green peas, diced potatoes or cashew nuts. I haven't seen this rice dish in any Indian restaurant, so if you want a fairly unique culinary trip to India, give this simple and easy dish a try!

Roasted Whipped Eggplant Dip Recipe Recipe
Today, my husband Lulu came home a little earlier than I expected. While he played with baby Aria, I concocted an easy dip for them to munch on before dinner. First, I roasted an eggplant. I let the eggplant cool and gathered the pulp. Then I mashed the mixture with the back of a fork, which was a reasonable substitute for a good arm workout (I'm finally back to my gym routine. Yay!). Lastly, I incorporated whipped cream for a light, almost airy eggplant dip.

I served the dip with warm pita bread and Persian cucumber sticks. If you'd like a fancier look, you could use it as a filling in phyllo dough cups or pre-baked puff pastry tartlets. Either would be an elegant item to serve at parties.
