Gobi Tamatar Recipe (Indian Cauliflower Curry) Recipe

Gobi tamatar is an Indian vegetarian dish made with cauliflower (gobi), tomatoes (tamatar) and ginger garlic paste. To thicken the sauce, I also added one small potato.

This is one of the healthier Indian dishes I know. The cauliflower is cooked in the tomato mixture until softened. The key to this dish is to use ripe, sweet tomatoes. I always make 2 batches of this dish; one extremely spicy with red chili powder and whole jalapeño peppers and one mild version for the children (and for me!). It's a good vegetable side dish, and a wonderful change of pace from traditional cauliflower salad.

Taro Root Korma Recipe

Taro korma is an Indian vegetable curry. The spicy gravy contains fried onion paste and yogurt and is flavored with ginger-garlic paste as well as several Indian spices. Taro pieces are fried till crispy, and then finish cooking in the curry paste. Taro is a very starchy ingredient that makes the gravy a lot thicker and denser when added.

Kormas can be either vegetarian or "non-veg" with any assortment of vegetables, fried cheese such as paneer, or meat such as goat korma. I came up with this dish for a very simple reason: there was a basket full of taro waiting to be cooked!  Taro root usually doesn’t keep for more than a week, and it will turn sour when it's mixed and stored in the freezer. Buy it close to when you’re ready to cook, and enjoy it. It’s definitely worth the effort.

Dopiaza (Indian Onion Curry Recipe) Recipe

This Indian dish consists of a generous amount of onions, both cooked in the curry (masala) and as a garnish. Onions are added at two stages during cooking, hence the name dopiaza in Urdu ("two onions"), [according to Wikipedia]. The sauce contains onions of course, ghee and yogurt and is flavored with ginger-garlic paste as well as several Indian spices.

Our garden is still filled with the red Creole onions Lulu planted this season. The onions are so fragrant and prolific; I thought the best way to use a large quantity was to make dopiaza. I tried to choose same-sized onions for even cooking.

If you have leftovers, you can make upside-down savory onion tarts the next day.

Chicken Kofta Recipe in Makhani Curry Recipe

Chicken kofta is not your average meatball. It's packed with Indian spices, garam masala and chiles. To top that off, in this recipe the kofta are drenched in a rich, creamy curried, tomato sauce made with tomato, onions, cashew nuts, lemon juice, ghee, cream and a few spices.

Seriously, what’s not to love? Any time you can say "meatball" and "cream sauce" in the same sentence, something delicious is probably going on. We often make this for dinner parties because it’s a little too rich to serve on a regular basis. Having said that, I find myself coming up with “special” occasions all the time as an excuse to make this dish. If you try it out yourself, I bet you will too!

Aloo gobi is an Indian vegetarian dish made with potatoes (aloo), cauliflower (gobi) and Indian spices. I also added peas, tomatoes and the usual ginger garlic paste.

I think aloo gobi was the first Indian dish I ever cooked when I got married. It's very easy to assemble all the ingredients, making it a good introduction to Indian cooking. First, a paste is formed from the spices, and then the vegetables are cooked in the paste until soft. Even though children may not love cauliflower, it is actually a kid-friendly dish. I’ve found it’s a great way to get my little munchkin to eat her vegetables. I just reduce the number of chiles, and serve it with a warm roti (flat Indian bread). Today I made it for us big kids, so I served it with basmati rice.
