Zucchini Tart with Mascarpone

I'm still cooking through the vegetables from our garden. Today, my husband Lulu and the girls picked dozens of zucchini and crook-neck squash. I stuck to one of their favorite meals and made a savory tart. I pan-fried slices of zucchini and squash as the topping for the tart and made a filling with leeks and mascarpone cheese. The girls followed the directions for my homemade savory crust and I let them assemble the dish. Served with a dried sour cherry and cherry tomato relish, what more could one ask for?

In my opinion, getting children involved in the kitchen and in our everyday tasks in general (the girls' chores include watering the plants daily, for example) is the best way to teach them healthy habits. They understand what is on their plate and the effort it took to get it there!

New Beginnings

2012 has definitely been a life-changing year for me. Yesterday, I underwent the Naturalization Oath Ceremony at the Heritage Theater in Campbell, California, and along with 403 other people from 63 different countries, I became a citizen of the United States of America. As I recited the Pledge of Allegiance for the first time as an American citizen, I felt very emotional. It's been a long journey. Vice Mayor of the city of Campbell, Evan Low, greeted us and made a wonderful speech. He's such a passionate and energetic citizen. He's a fourth-generation American and he talked about the wonderful opportunities this country has given his family, including the ability to contribute and engage in the community and to do his part to shape the country.

I was particularly moved by his comments on the diversity of cultures and backgrounds that we share with each other, especially here in California. It meant all the more for me, given that my baby daughter was in attendance, as I am of French-Vietnamese descent and my husband is Indian-American.

If you had asked me before, I would always have said that 2000 was the best year of my life. I was a young engineering student who found an internship in Silicon Valley for the summer and I met the love of my life. But I have to admit that this year is rising up the charts. I've watched my little girl grow up into a very entertaining six month old, I've become a U.S. citizen, and I have one more exciting announcement: I've been given the opportunity to publish my first cookbook at the end of the year! It's been a dream of mine to write a book, and it was kind of surreal when I was approached about it earlier this year.

I just finished the manuscript so I'm beyond excited to be able to share the news with you! I'm truly living my American Dream. I'd like to say a heartfelt thank you to every single one of you, my readers, for sending your lovely messages of encouragement and for being such faithful followers of my daily cooking adventures. I've been sharing my everyday life with you for the past three years, and it's given me the opportunity to cross paths with many wonderful people along the way. It's been an amazing journey. So merci!

Now back to my favorite subject, which is food! Being a freshly minted American, it just felt right to make an apple pie, though of course, with my own twist. The tart crust is made with cream cheese. The pie is covered with diced apples and pecan crumbs and to make the dessert more visually appealing, I topped it with sliced apples and brushed them with apricot preserves at the end.

And finally, since Memorial Day weekend is upon us, I'd like to take the opportunity to thank our soldiers who have fought and continue to fight for our freedoms. God Bless America!

Eggplant Tart Recipe

This eggplant tart is a refreshing and light dish. Eggplants are sliced, grilled and seasoned with pistachio pesto. The filling is a mixture of chopped eggplant with sautéed water chestnuts, which adds body to the tart.

Paired with a salad, this makes the perfect midday meal. It's pretty filling and will keep you going for the rest of the day. Enjoy!

Mushroom Mozzarella Cheese Tart Recipe Recipe

My husband Lulu is addicted to anything with puff pastry dough. Because of the horrible windy weather, I decided to prepare my version of (vegetarian) chicken soup for the soul in the form of individual mushroom and mozzarella tartlets accompanied by a bowl of warm corn chowder. It’s the perfect prescription for this cold, gray day.

This savory tartlet consists of 4 layers. First, I baked the puff pastry shells separately in the oven. I cooked the first layer of soy chorizo along with tomato paste and tomato sauce (you could also add ground beef for extra flavor if you don’t need it to be vegetarian). The second is sautéed large button mushrooms in butter and the last one is thick mozzarella slices. The result is spectacular and is really enhanced pairing it with corn soup and garlic cheese bread. You won't be disappointed!

Walnut Nectarine Tart Recipe

I stopped by Costco this week and found that nectarines were still on sale. Our family has been enjoying juicy, sweet stone fruit all summer and I was hoping this case of them would live up to our recent experiences. Alas, these nectarines weren't nearly as flavorful as the ones from earlier in the summer. Instead of letting them rot in our fruit basket ignominiously, I decided to give them a new and much more delicious life by baking them in a frangipane fruit tart.

For this version, I pre-baked store-bought puff pastry that I layered with walnut buttercream and nectarines. Making the nut butter cream for the tart has become one of my specialties; I could make this dessert with my eyes closed. It's very simple, and if you do this as much as I have, it will become second nature for you as well. Finally, I gave the product a professional look by glazing the tart with nectarine jam. The result was absolutely delectable!
