Oven Roasted Chicken with Kumquats
The strong flavor of kumquat takes roasted chicken to another level. I marinated the chicken with kumquats and finished the dish by brushing the poultry with a kumquat glaze. The final product was tender and tasty with a crunchy skin.
I served the chicken as one of the dishes for our buffet-style dinner party. We had about 15 people at the house, so I roasted 3 whole chickens. I carved the chickens and placed them in a chafing dish with the chicken drippings at the bottom of the dish to prevent the chicken from drying out or burning. There were literally only a few wings left, so I think it worked out pretty well. Our tree is absolutely bursting with kumquats, so if you're a fan of the diminutive citrus, stay tuned, because I'll be posting many more recipes in the near future.

Kumquat Breaded Baked Tofu
Kumquat breaded baked tofu is the result of one of my various culinary experiments. I pan-fried pieces of tofu, covered them with a crust of bread and baked till golden. Tofu is a blank canvas that will absorb any flavor. By drizzling the puffed baked tofu with a ginger kumquat sauce, the complexity of the flavor matched the complexity of the texture of the dish.
After making my breaded version of Frenched rack of lamb, I thought it would be fun to make a vegetarian alternative. My little munchkin and I went to the garden and picked a basket full of mini kumquats, and it occurred to me that a kumquat persillade crust would go great with tofu.
Experiments don't always go the way you want them to, but judging by how quickly Lulu and the girls devoured the dish, I'd say it worked out all right. Give it a try, and don't be afraid to add your own twist!

Kale with Caramelized Kumquats
This side dish couldn't be easier to make. Onions and kumquats are slowly caramelized with ginger and agave nectar and added to slightly sautéed kale. What could be better than a dish that's delicious, healthy and simple?
I was inspired to make this dish by a reader. Chef Doreen T. Ross is a culinary artist and consultant from North Carolina. Doreen sent me a recipe suggestion using kumquats (I've asked for recipes using this ingredient) with wilted kale. I've adapted Doreen's recipe and added an Asian twist to it. Sunny and Lulu were my guinea pigs, and they loved it. Merci Doreen!

Thanksgiving Cranberry Sauce with Kumquat and Jalapeno
We make cranberry sauce for Thanksgiving every year, and every year at the end of the meal there's a bowl full of cranberry sauce left-over. It's not that we don't like cranberries; they have a great flavor that I make user of in stuffing, cakes and drinks. Cranberry sauce, though, is a bit one-dimensional, so I've been on a quest to come up with a version that is more food than Thanksgiving table ornament.
After several trials, I think I've come up with some small additions to a traditional cranberry sauce recipe that really give it new life. I added roasted and chopped jalapeños for a little heat, kumquat zest for a touch of citrus, and brown sugar to mellow out the sweetness with hints of caramel. I knew I was on to something because Lulu was eating it all by itself!
If you're like me and the idea of cranberry sauce has been more appealing than the reality, I can tell you that with a few simple modifications you may actually come to enjoy some cranberry sauce with your turkey.

Falafel Salad with Lemon Tahini Vinaigrette
During our last trip to Philadelphia, Lulu and I realized how narrow the vegetarian options were in restaurants. Lulu had falafel during the entire time of our stay there.
He hasn't touched it since we got back and I thought it was time to re-introduce him to falafel. I served them in a Mediterranean-style salad along with lemon tahini vinaigrette, candied walnuts and thinly sliced kumquat preserves from last winter's harvest.
